Chocolate Icing

This was a great frosting! I did not have cocoa powder, so I used 1/2 oz. unsweetened chocolate, and melted it in with the butter/sugar mixture, along with 1/2 c. semi-sweet chocolate chips. I did not let it boil, b/c of the addition of the chocolate, but it turned out really yummy. Thanks!

Juicy Fruit Salad

Being lazy, I just threw it all in the food processer for a few seconds, making it smaller pieces, but still yummy! My husband ate all the leftovers, so I'll definitely make it again to help him get his fruit content!

Oatmeal Cherry Walnut Cookies

this is an awesome oatmeal cookie recipe. the mix-ins of cherries and walnuts are very good, but next time i think i'll try some other mix-ins for variety. but yummy!

Raggedy Ann Cookies

These are yummy cookies! I used margarine instead of shortening, and regular oats instead of quick cooking. Also, I didn't have parchment paper, but I wish I did because they are very hard to remove. I tried grease and aluminum foil, but they both worked only so-so. I also omitted the nuts for my husband's sake, and they were yummy. May try adding raisins next time. Very sweet, flat, chewy cookie. Enjoy!

Simmering Chicken Strawberry Kabobs

This was really yummy! I used more cinnamon and nutmeg than listed - doing it to taste. I also used more pineapple, and some green peppers to add more color. The roasted strawberry is very yummy and different. The meat was a great flavor, tangy and sweet. It was a wonderful change in kabobs, and gave me lots of ideas. Will definitely make this again. Thanks!

Chocolate Zucchini Bread I

This was delicious! I used several suggestions, including the 1/3 cup of applesauce in place of some of the oil and not including the skin of the zucchini for better disguise. I also substituted 3/4 c. of wheat flour for some of the regular flour and added 1 T. of wheat germ. I also only had semi-sweet chocolate squares, so I cut the sugar down to 1 cup and used the semi sweet chocolate squares. I also added 1/2 tsp. of nutmeg. Make sure to grease your pans well, I only lightly sprayed and it stuck! Really loved the taste, will make again!

Mock Pecan Pie I

This is a very good pie, and does resemble pecan pie in appearance. It is delicious tasting though I don't think I could fool anyone into believing it is pecan pie. My husband is allergic to pecans though and it was a nice substitute that we both could enjoy.

Mostaccioli with Spinach and Feta

Quick & Easy, Flavorful, Healthy. What's not to like? This is a great way to use feta, though I didn't have the specific type of feta specified by the original recipe (neither do most people I suspect). I wonder how that affects flavor. Very delicious, easy to add ingredients to if you like, this is a wonderful recipe.

Teri's Dinner in a Pumpkin

Used 1 lb ground beef and 1/2 pound hot smoked sausage cut up small. Put half the pumpkin pie spice inside the pumpkin to coat it and half in the meat. Used beef broth, white rice, 2 cans cream of mushroom, no mushroom pieces or green beans. Tried Adding cabbage. Cooked 1.5 hours and could have gone longer - pumpkin was cooked but just barely. Big hit. Either cut up cabbage smaller or leave out and try peas perhaps. Don't like green beans or mushrooms much so didn't try them. Loved the flavor of this dish. Hit with the kids and the house smelled awesome. Love that you can add pumpkin to your plate or leave it out, great flexibility. Pumpkin pie spice works great in this application and will definitely be making this again. (Though I guess I changed it a bunch LOL!) Had too much for our pumpkin to close it properly, not sure how important that is.

Pumpkin Muffins II

Delicious recipe. Too much cloves IMHO. Gives an interesting aftertaste. Use only 1 tsp and use fresh nutmeg. Straining pumpkin puree for excess liquid is usually done when making your own - if muffins are too moist, strain puree first. I got 23 good sized muffins. Substituted 1 c whole wheat for some of the flour.

Tomatillo Soup

Very delicious soup, good basic recipe! Following other suggestions used 1.5 lbs tomatillos. Used leftover shredded spicy pork instead of shredded chicken as well. Tasted the soup before adding the hot pepper sauce and it was very tangy/vinegar-y. Hot pepper sauce cut the vinegar flavor and did not add much heat. If you don't like the flavor of your soup, adjust the seasonings! I didn't measure the hot pepper sauce, just kept adding drops and retasting until I liked it. Cilantro is a must, I was skeptical but it really adds to the flavor. Sour cream makes it creamier if you like a more substantial soup. Served with tortilla chips as well, big hit with all the kids!

Key Lime Pie VII

This pie was delicious! LOVED the tip to use my garlic press to juice the limes. So easy! It took 20 limes and 2 cans of sweetened condensed milk. Not sure if the tiny bubbles came, so took out after 10 minutes. So EASY and DELICIOUS!
