Mijo's Slow Cooker Shredded Beef

delicious! used cola and baked in the oven in a dutch oven for about 2 hours at 350 and 6 hours at 250. Yum!

Curry Pumpkin Soup

I cut the sugar down and increased the strawberries but it was still way too sweet and artificial tasting. I wanted to like it because it was beautifully colored and smelled good and the crumbs were good. But normal bites were overpoweringly artificial sugary fake non strawberry.

Pumpkin Turkey Chili

Cornucopia Chili

This really makes a ton if you don't scale it down! I used less TVP than called for and it was still too much. Did fool everyone but was still a lot. Mine had to simmer for about 2 hours before it wasn't too watery but had a good thick chili feel to it.

Key Lime Pie VII

This pie was delicious! LOVED the tip to use my garlic press to juice the limes. So easy! It took 20 limes and 2 cans of sweetened condensed milk. Not sure if the tiny bubbles came, so took out after 10 minutes. So EASY and DELICIOUS!

Tomatillo Soup

Very delicious soup, good basic recipe! Following other suggestions used 1.5 lbs tomatillos. Used leftover shredded spicy pork instead of shredded chicken as well. Tasted the soup before adding the hot pepper sauce and it was very tangy/vinegar-y. Hot pepper sauce cut the vinegar flavor and did not add much heat. If you don't like the flavor of your soup, adjust the seasonings! I didn't measure the hot pepper sauce, just kept adding drops and retasting until I liked it. Cilantro is a must, I was skeptical but it really adds to the flavor. Sour cream makes it creamier if you like a more substantial soup. Served with tortilla chips as well, big hit with all the kids!

Amazingly Easy Irish Soda Bread

Tasty, easy, fast, delicious. Yum! (If your bread was still doughy in the middle, put it back in the oven and let it finish cooking! The outside is meant to be crusty and brown!)

Orange Spiced Carrots

Quick and tasty. I used pineapple mango juice and would probably prefer orange but that's what I had on hand. Added peas as well, my 1 yr old loved this.

Pumpkin Muffins II

Delicious recipe. Too much cloves IMHO. Gives an interesting aftertaste. Use only 1 tsp and use fresh nutmeg. Straining pumpkin puree for excess liquid is usually done when making your own - if muffins are too moist, strain puree first. I got 23 good sized muffins. Substituted 1 c whole wheat for some of the flour.

Teri's Dinner in a Pumpkin

Used 1 lb ground beef and 1/2 pound hot smoked sausage cut up small. Put half the pumpkin pie spice inside the pumpkin to coat it and half in the meat. Used beef broth, white rice, 2 cans cream of mushroom, no mushroom pieces or green beans. Tried Adding cabbage. Cooked 1.5 hours and could have gone longer - pumpkin was cooked but just barely. Big hit. Either cut up cabbage smaller or leave out and try peas perhaps. Don't like green beans or mushrooms much so didn't try them. Loved the flavor of this dish. Hit with the kids and the house smelled awesome. Love that you can add pumpkin to your plate or leave it out, great flexibility. Pumpkin pie spice works great in this application and will definitely be making this again. (Though I guess I changed it a bunch LOL!) Had too much for our pumpkin to close it properly, not sure how important that is.

French Butter Cakes (Madeleines)

This is a great madeleine recipe! Good directions! I used Pam baking spray and it worked nicely. I love that it makes just the right amount for one madeleine pan. I tried both the chocolate and regular varieties and they are both delicious. Delicate and light as madeleines should be.

Tuna, Avocado and Bacon Sandwich

Added 2 Tbsp of salad dressing to help tuna mixture with dryness - made it more like consistency I am used to. Melted cheese on tuna before adding everything else - Delicious! Loved it. Yummy!
