Good Morning Egg Bake

Great recipe! I admit to adding some Aleppo pepper, but that was my only change. This was a fabulous way to start the day and soooo easy to put together!

Creamy Italian Slow Cooker Chicken

Reviewed: Apr. 22, 2012
Four stars for ease and texture. Loved how it went together easily. Made it exactly as listed this time. Next time (and there will be a next time) I'll zip it up with some herbs and spices. I like my food to dance, and sing and this just needs some more pep. It's a great base though - four stars for giving me a solid start!

Aunt Carol's Spinach and Fish Bake

Reviewed: Apr. 8, 2012
Absolutely the easiest and tastiest fish ever. I admit to a splash of malt vinegar after cooking. But cod and spinach scream for it. I cooked it as written this time. Might add aleppo pepper next go...and there will be a next go!

Mom's Oatmeal Blueberry Pancakes

Reviewed: Sep. 25, 2011
These rocked!!! Everyone dug in and there wasn't a crumb left. I didn't alter the ingredients, but I did microwave the oats in the buttermilk for a min or so and let them set to cool back down. The batter was perfection!!!! Will definitely be making these again and again!

Best Cranberry Chicken

Turns out I didn't have any chicken, but I did have some meatballs frozen. I did the sauce and put them in the crockpot. 6 hours later on low it was fabulous!!! This is some awesome stuff!

We Be Jammin' Jamaican Banana Bread

Reviewed: Dec. 26, 2010
I'd give it 5, but I hate bananas! It's easy. Has a different twist and I used a chop stick to poke holes in the top for the glaze to absorb. I didn't eat it, but since it disappeared, I'd say it rocked. I lowered the temp to 350 and added about 15 min to the baking time and it was perfection. Turn it out on foil so you can glaze and wrap it to go. This loaf rocks!

Mom's Buttermilk Pancakes

Reviewed: Sep. 19, 2010
Made it as others said - exactly as written. Oh was it ever worth staying inside the lines. These were light and fluffy. Make a double batch though. I used a measuring cup to pour the batter as suggested and only got 6 pancakes. Oh these will be a standard everytime I get buttermilk for chicken marinating!

Kalua Pig in a Slow Cooker

It just doesn't get any more simple than this one. And boy is it ever tasty. Has a smoky rich flavor. I did cut back on the salt and I don't think I missed a thing. This got eaten up. Servied it like NC bbq on buns with a vinegar sauce. MMMMMM

Very good burger. I added an egg and bread crumbs. Stayed together well and was just enough heat. Lovely. Will make this again.

Sensational Steak Sandwich

Reviewed: Apr. 11, 2010
This was so easy and everyone loved it! I tripled the recipe. The meat was tender and moist. It does make a lot of "juice" and it just seemed a shame to throw it down the drain. Maybe stash for the freezer of beef stock gravy base! EDIT: Made this again and since I was out of red wine I used beer. Still totally awesome. Lots of flavor and tender as all get out!

Peanut Butter Kisses I

Go together fast and the fact the sugar stayed grainy in the batter concerned me...but wow what an easy simple cookie. Taking them out a few minutes early left them chewy but done. Love 'em! Next time I'll try and put them in a decorator bag to dab 'em on the tray.

Ricotta Cheese Pancakes

Reviewed: Jan. 24, 2010
Quite simply one of the tastiest pancakes I've ever eaten. I used 1 egg as I didn't have any substitute ones, and Truvia because I had no Splenda. I added a splash of lemon juice - lemon and blueberry just go together- a sprinkle of cinnamon and a grating of nutmeg. Easy, tasty, sweet but not overly so. Just put a smear of butter on them. Will definitely make again and try with different fruits. I bet these would rock with dried cranberries or fresh strawberries!

Cousin David's Slow Cooker Brisket

Reviewed: Dec. 19, 2009
Made this for today's snow day. Oh the house smelled great! It tasted awesome. Just enough bite but not over powering. Flavorful and dinner doesn't get much easier. Added garlic potatoes and a salad. DONE! I did make a bed of sliced onions as suggested in a few other reviews. The sauce was awesome. I'm glad there's lots of it. Will make this again.

Thanksgiving Leftover Casserole

This was an easy and great way to use up the leftovers. I did add a bit more flavor to it with some sauted onions and herbs. This took less than 10 minutes to assemble then it was pop it in the oven and walk away. The sauce makes it. We'll have this again!
