Romantic Chicken with Artichokes and Mushrooms

Reviewed: Apr. 20, 2001
I thought this was outstanding! This is a perfect recipe for a romantic meal or for important company. The chicken is very moist and the sauce is excellent. I served this over buttered noodles, which absorbed the delicious sauce. I did make a minor alteration: since I was serving this to children as well as adults, I substituted apple juice for the white wine. I was so surprised at how well this substitution worked and would continue to use the apple juice even if not serving to children.

Hot Cross Buns I

Reviewed: Apr. 15, 2001
These were really very nice! I was pleasantly surprised to find a recipe for this Easter treat that I could make in my bread machine. Fancier models of bread machines that have a dough cycle that includes a rising time can omit the rising in the pan described in the original recipe. I also would go ahead and add the currants/raisins and cinnamon with the rest of the ingredients, rather than waiting. The taste is much like very light white bread with a hint of cinnamon and raisins. If you prefer more zip, add the allspice, vanilla, butter extract etc as recommended by a previous reviewer. However, the recipe as it stands is really very good. The buns come out huge and golden - picture perfect.

Chicken Riggies II

Reviewed: Apr. 11, 2001
This is a delicious dish, even if you substitute half-n-jhalf for the cream. This is rich and elegant enough for a dinner party. I might add some mushrooms next time as well.

Aunt Blanche's Blueberry Muffins

Reviewed: Apr. 11, 2001
These were good muffins, but not excellent. The texture is very good - very cakey - and they rise up very tall. The taste however was not as moist and delicious as other recipes I have tried - something was missing. The taste was similar to many bakery/coffee shop purchased muffins that look so tempting and beautiful, but when you bite into they are just good, not wonderful. However, if you love the taste of coffee shop muffins, then this might be the recipe you've been hunting for.

Aunt Cora's World's Greatest Cookies

Reviewed: Mar. 30, 2001
Wow, are these good cookies! My husband said they are excellent. The peanut butter flavor is not too strong -enough to know it is in there, but different in taste from a true peanut butter cookie. What I love about these cookies is that they hold their shape very well - they did not spread all over the pan and look like perfectly shaped cookies when cool - just like from a gourmet cookie shop. This recipe makes LOTS of cookies too. A real winner of a recipe!

Diana's Hawaiian Bread Rolls

Reviewed: Mar. 29, 2001
These rolls are wonderful! The taste is so light and lemony. I have been searching for a lemony yeast roll to compliment seafood dishes, and this will fit the bill perfectly. They are so delcious, even without any butter on them. I used margarine instead of the butter flavor shortening and they came out great. Excellent. I will make these again.

Baked Ziti I

Reviewed: Mar. 29, 2001
This is a really great recipe. It is very easy to prepare, with ingredients you are likely to have lying around anyway. You need a deep pan or at least a 9x13" casserole in order to fit everything into the pan. If you spoon everything in carefully, it does all fit, even with the two jars of sauce. I followed the recipe almost exactly - I did add a shake of garlic powder to the meat, however. I used high quality spaghetti sauce and it was just wonderful. 10 Stars!

Seafood Au Gratin

Reviewed: Mar. 25, 2001
I really wanted this recipe to be good - it sure cost enough for the ingredients. There was not enough sauce for the immense amount of seafood called for in this recipe - which was way too much in my opinion. The sauce also didn't have enough flavor to enhance the seafood. I would not make this again.

Irish Potatoes

Reviewed: Mar. 15, 2001
These are wonderfully easy to to make and taste great! My 5 year old made these all by herself with great ease... it was so much fun to shake the candy in the bag. And these fix up in just minutes. The taste is very sweet - but very good all the same. This recipe is ideal for kids. On note: the recipe says it makes 24 potatoes - yes, if you want teeny sized ones. You can easily make larger potatoes if you like - I would say 12 larger size poatoes would be more like it.

Cajun Chicken Pasta

Reviewed: Mar. 11, 2001
I thought this recipe was delicious. My whole family enjoyed it too - including my young daughter. It is not spicy - the Cajun seasoning is more seasoning & salt than fire. I would even recommend omitting the 1/4 salt called for in the recipe if you don't care for salt. I also tried substituting half-n-half for the cream and it turned out very good. Next time, I will try using half of the Cajun seasoning on the chicken and then adding the remaining Cajun seasoning when the other spices are added to give the sauce a bit more zip. A good company dish.

D's Famous Salsa

Reviewed: Mar. 9, 2001
This is a great recipe! A blender produced the mos satisfying texture. Very easy and tasty. If you have been looking for a great tasting salsa that does not require fresh tomatoes, this is the one. One batch is enough for a small party.

Tortillas I

Reviewed: Mar. 9, 2001
While the taste was good, my tortillas came out a little stiff. Also, it was very difficult to roll out the tortillas flat enough. I think a tortilla press would be a great help. A good recipe, but not as easy as I had hoped.

Pistachio Bread

Reviewed: Feb. 11, 2001
This recipe is excellent. The bread comes out a beautiful bright green color and looks very pretty when sliced. Perfect for holidays such as St Patty's Day or Christmas. My daughter loved making this bread with me - it was very kid friendly. The texture is moist and the taste is lightly sweet. Terrific recipe.

Nanny's Spaghetti Sauce

Reviewed: Jan. 7, 2001
Very quick & easy. Both my daughter and husband enjoyed this sauce - which is rare because they usually complain that nothing quite compares to my husband's Nana's sauce, in their opinion. It doesn't taste like her sauce, but they thought it was a good sauce anyway. I didn't like this recipe as much, though.

Mocha Cream Bread

Reviewed: Aug. 6, 2000
When prepared as directed in the original recipe, I found the bread came out a little too doughy and the procedure was a bit lengthy. However, the taste of the bread was quite good. You may prefer to use the Sweet Bread setting on your machine rather than using just the dough cycle. Then simply add the chocolate chips at the beep, if your machine has this feature (or after the first kneading). Worth trying again.

Easter Bread Ring

Reviewed: Apr. 27, 2000
This is a very good recipe. I did make some changes, however. First of all, I used half of the salt and still had excellent results. Also, I substituted sultanas (golden raisins) for the fruit called for in the recipe. I also omitted the nuts. The resulting loaf was beautiful to look at and makes an excellent Easter morning certerpiece. I do question the safety of letting the braided loaf rise for the second hour because of the raw eggs. Only let mine rise 30 minutes after the inserting the colored raw eggs. Everything turned out great. The bread is very lightly sweet and goes very well with coffee.
