Broccoli Ham Ring

good to use up what's in the refrigerator, easy (after all the chopping) and we both enjoyed it. Used chopped onion (to use up leftovers) and subbed mushrooms for broccoli, which we were out of. Good nonetheless

not bad, but not a lot of punch. Maybe they would be better with fresh rosemary?

Linguine with Mushrooms & Ham

way too much onion! But kind of bland--I added several good shakes of Parmesan, which helped. I don't think we'll make again

Chicken Breasts With Herb Basting Sauce

Reviewed: Nov. 7, 2007
Very flavorful. I used boneless, skinless breasts and marinated for a few hours. When done marinating, it looked like all the sauce had been absorbed by the chicken. But when I checked after 15 minutes or so, there was plenty. Took about 30 minutes overall.

Jalapeno-Blue Cheese Burgers

Reviewed: Nov. 5, 2007
I have to say, these are HUGE! I cut it in half, but made four burgers, and they were still big. Followed other's advice about the salt, and left it out completely. Otherwise, exactly as written. Husband didn't care for as much, so the four rating--personally a five.

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 7, 2007
This was excellent, and even better the next day! I used low sodium, low fat broth for health reasons. It was a little bland; but then I gave just a sprinkle of salt to the top of the pot, and it made all the difference.

Cinnamon and Lime Chicken Fajitas

Reviewed: Jun. 12, 2006
We didn't care for this at all. Way too bland. I didn't feel like I could taste the lime at all. And what was the point of the potatotes--they needed something too besides just salt. I was very disappointed.

Strawnana Bread

I used my food processor to chop the strawberries, rather than mashing. Same for the bananas. Quite the timesaver! After reading the comments about the walnuts and orange zest overwhelming the strawberries, I tried it both with and without. Took it to a get together and everyone really enjoyed, but voted in favor of the nuts and orange zest!

Best Yet Turkey Chili

I added way more than a pinch of all of the spices, but it still seemed bland to me. Don't think I'll make it again.

Congo Bars I

Reviewed: Jun. 10, 2005
based on what others said, I cut back the chips to only a 12 oz bag (1 1/2 C) but I still ended up with a thick layer of chips along the bottom of the pan. Baked them for 30 minutes as directed, but the cookies along the edge were so hard I couldn't get them out of the pan! The ones in the center tasted pretty good, so I'll probably make again, just with fewer chips and about 5 minutes less baking time.

Fired Up Southwest Fajitas

Absolutely great, and I'm not a big beef fan! I couldn't find the McCormick Southwest Marinade, so I substituted Kroger's. Will definitely make again.

Broiled Sweet and Tangy Tilapia

quick and easy; definite taste of raspberries for such a small "dose". Watch time closely--mine didn't take the full time broiling and would have been very dry if done for the full two minutes the second time over.

very tasty; will definitely make again. It was too cold and snowy to grill outside, so I did it in the oven at 425.

Ham and Cheese Quiche

Reviewed: Oct. 5, 2004
Yum! technique is a little different--adding the ham on top of the egg mixture; I wasn't paying attention and had to pick the ham and mushrooms off and then add them back. Also used frozen spinach because that was on hand. But it still was great.

Greek Souzoukaklia

Interesting texture, but it definitely needs some type of sauce--way too dry for my taste!. We added a little Italian dressing (along with lettuce and tomatoes)and served it in whole wheat pitas.

Garlic Chicken

I was disappointed; turned out rather dry (and I turned it down to 375 cause it looked like it was cooking to fast!)Other than that, I followed the recipe exactly; needed more garlic, also salt/pepper as others mentioned.

Lemon Poppy Seed Quick Cake

Reviewed: Jul. 15, 2004
I would forgo the glaze. Found it overwhelming, and the cake really doesn't need it. Next time, I think I'll just dust it with confectioner's sugar. Cake was a little "wet" but that may be because I had trouble measuring the yogurt. It's only available in 6 oz containers around here; I was assuming 8 oz would be 1 cup, but it seemed to take more than 1/3 of the second container to fill the measuring cup. But my daughter, who asked for it as a 19th birthday cake, didn't mind.

This was wonderful! I was a little wary of some of the ingredients (soy sauce in fajitas?) but everyone loved them. Couldn't find my hot pepper sauce, so I added 1/8 teaspoon cayenne pepper.
