About this Cook
I'm recently diabetic and have been cooking healthier and leading a better life for the past 8 months now. I thought it would kill me but it hasn't. I even like some of it! UPDATE: I'm now healthy and trying to maintain that. I don't cheat...much. Hey we are all human!
My favorite things to cook
I love anything that you can eat with chopsticks, in order to make it healthier I don't use white rice.
My favorite family cooking traditions
My family is old world Appalachia so you never know what you will get. But I'll NEVER forgot my Grandmother's green beans and ham hocks. Or her Rhubarb and Strawberry pies. Whenever my mom makes it everyone is always quiet during the first forkful, the taste memory is so powerful.
My cooking triumphs
I've had successful Christmas and Thanksgiving dinners all on my own.
My cooking tragedies
Holondise sauce, see I can't even spell it. Ha, ha it's probably for the best. It's rotten for you anyway. UPDATE: I've conquerored it! It's easy really, easier than spelling the word.

General Tsao's Chicken II
It was easy to make and easily outshone the take out we usually have. I did not have the dried chillies and used a chilli sauce found at my local Asian market (there is a whole shelf dedicated to this ONE sauce you can't miss it). The dish still turned out great.

Peach Cobbler II
I went to the "famous" Gilbert South Carolina peach festival and had to do something with all the peaches I came home with. This recipe is the greatest! I cut back to 1 cup sugar on the peaches and only used 1 cup of water and baked 45 minutes. It is perfection, my friends think I am a culinary wiz!
