Candy Bar Fudge

Reviewed: Jun. 27, 2005
Taste like my favorite candy bar! I went ahead and used a whole pkg of caramels (50) and 1 1/2 tbsp of water. I love caramel and the little bit extra made the peanut/caramel mix easier to spread. Next time I will try it with pecans:)

Creole Seasoning Blend

Reviewed: Mar. 9, 2006
This stuff is way better than store bought cajun seasoning! I used 4T. of it for the slowcooker jambalaya recipe on this site, omitting the other spices and using just this.

Salsa Chicken

Reviewed: May 22, 2006
I have made this several times and my family loves it!The last time I made it I decided to chop the chicken and add corn and black beans, I then spread refried beans on top and added the cheese the last 10 minutes of cooking. I served it with sourcream, salsa and shredded lettuce on the side. I also had soft shells and tortilla chips so they could eat it like dip or a soft taco.Everyone tried it both ways and loved it!

Chocolate Earthquake Cake I

Reviewed: Jan. 9, 2007
It looks ugly, but tastes soooooooooooooo good!I did add an extra 8-oz. of cream cheese...it cut down the sweetness of the frosting a little and gave it a little more cream cheese taste (I love cream cheese!)I think the frosting is what makes the cake :)

Honey-Garlic Glazed Meatballs

Reviewed: Nov. 8, 2007
These have a really good flavor. The only change I made was cutting the salt down to 1 tsp. I thought 2 tsp. was a little much.I also baked them on my broiler pan and didn't have to worry about the grease. Next time I'll try them using ground pork.

I made these as directed and dipped in 2 1/2-cups melted chocolate chips with 1 T. of crisco added. They tasted like fudge truffles (definitely good for a chocolate fix!)Next time I'll try dipping in other flavored chips like Peanut butter, White chocolate or raspberry.

Mexican Whole Wheat Flour Tortillas

Reviewed: Feb. 6, 2008
These are good and easy to make! I did end up having to use a little extra hot water to get the dough smooth.I made ahead of time and let the balls set with a damp cloth till I was ready to make them later in the day.If your worried about the frying and rolling at the same time;roll a few out ahead of time(they wont stick to each other if you stack them).

Yummy Honey Chicken Kabobs

Reviewed: Sep. 24, 2008
If you can find the skewers that have double prongs it makes grilling easier! You dont have to worry about the meat sliding around while your trying to flip. I make 2 batches of marinade; 1 for the veggies & one for the meat and I save the one from the veggies to brush over the meat while grilling.Have used on both chicken and pork and both are good!

Espresso Bark

Reviewed: Mar. 16, 2009
I ground up the coffee beans and melted 1C. of white chocolate chips for the top layer. I have found that cheap chocolate chips have more wax and dont melt as well. The ground coffee is a little gritty so I think I'll try 1/2 C. ground coffee next time.

Simple Whole Wheat Bread

Reviewed: Mar. 23, 2009
I make this using all whole wheat flour(5 cups + 2-3 cups more) and I add just 1/2 C. honey to the water when I warm it up for the yeast.I get 2 large loaves with this recipe; I also slice it and freeze after it cools, then we take out of the freezer as needed(if you freeze while still warm the slices are harder to seperate). This recipe is also great for dinner rolls!

Three Animal Italian Meatballs

Reviewed: Apr. 4, 2009
These are great meatballs! I used ground sausage instead of beef (can't have it), then used 3 eggs,1 C.oats instead of bread, and I also added 3 cloves of chopped garlic. This made huge meatballs that I just browned in a pan and then poured over it: 29 oz. Hunts Tomato Sauce, 1 tsp brown sugar, 3 cloves garlic, 1/2 tsp. Oregano, 1/2 tsp. Thyme, 1/2 tsp. Basil, and 1 Bay leaf(let it simmer in a pan a little bit before pouring over it.)Let it simmer till meatballs are done then add 2 C. shredded Mozz.and continue cooking till cheese is melted. Also makes great meatball sandwiches!
