Refried Beans Without the Refry

I will never buy refried beans again!!! The only thing I did different was using 1/2 Black Beans & 1/2 Pinto. My family thought they were better than anything bought! If you want to make a large batch of bean dip, after mashing the beans add:2 C.salsa, 2C.shredded Co-Jack cheese, 2C. shredded pepperjack cheese,8oz. creamcheese, 16oz. sourcream, 2T. chili powder, 1/2t. ground cumin...mix and let cook a couple hours longer so flavors can blend.Makes a huge batch so just freeze leftovers :)

Colleen's Slow Cooker Jambalaya

This is good! I used 4T. of the Creole Seasoning recipe on this site instead of the seasonings listed (gives much more flavor).I also found that 4 hours in my slow cooker is plenty of cooking time and I don't end up with mush!The last 1/2 hour of cooking I add the shrimp and 2C. of instint brown rice.

Eclairs I

I make eclairs alot and for those who have a problem with the "shell"part not turning out....The recipe I have used for years (same ingredients and measurements for 12)calls for the ball of dough to cool for 5 mins. then beat in eggs one at a time. After putting on greased baking sheet; bake for 20-25 mins. at 400(golden brown), then cut a 1-inch long slit on side of each eclair. Reduce oven temp to 375 and bake for 10 more mins (this allows the inside to cook a little).Hope this helps. Try filling with BAVARIAN CREME FILLING: 1 1/2 C. chilled whipped cream; 1 pkg. (8 oz) cream cheese, softened; 2/3 C. brown sugar; 1 t. vanilla; 1/8 t. salt...In a chilled bowl, beat cream untill stiff. Blend remaining ingredients & fold in cream.

Candy Bar Fudge

Taste like my favorite candy bar! I went ahead and used a whole pkg of caramels (50) and 1 1/2 tbsp of water. I love caramel and the little bit extra made the peanut/caramel mix easier to spread. Next time I will try it with pecans:)

Roast Beef and Avocado Wraps

These were very good!I did double the cream cheese spread for the 6 wraps, and used fresh salsa instead of tomato. I also chopped up the avacado and added it in with the fresh salsa.I have made several wraps from this site and this one is my familys favorite.

Almond Rhubarb Coffee Cake

This is a nice moist cake! I added 3C. of rhubarb (only because thats how much I ended up with after chopping it up), doubled the topping, only adding almonds in it and not the cake part; poured it into a 9x13 pan and baked it an extra 5 mins.

Fried Ice Cream

I used Bryers Natural Vanilla and got 16 balls out of it; and used Total Honey Nut Crunch instead of CornFlakes to give the crust a little more of a sweet taste. I also found that freezing the balls after frying was better because they don't pop out of the shell when refrozen!

Creamy Mocha Frozen Dessert

This was really good!I did use 2 oreo crusts instead of making my own. I also used 1/4 Cup coffee liquer in place of the coffee. I then put chopped pecans in the bottom of the crust and poured the filling over and added the whipped topping on top instead of into the filling.TRY WHIPPING IN A CHILLED BOWL: 2 Cups heavy whipping cream with 1 tsp. vanilla and 1 Cup pwd. sugar, this is enough for the 2 pies.

Good stuff and lots of it! The only thing I did different was use Black Beans instead of Kidney,decrease the chili powder to 2 Tbsp. and added 1 Tbsp. of cumin and a few chopped jalapenos.

Best Bread Machine Bread

Great bread recipe! I also use it for breadsticks by decreasing the sugar by 1 Tbsp and using the dough cycle. You can add garlic and parmesan if you like. When dough is ready just roll out and slice into breadsticks and let rise and bake 375 for about 12-15 min.Brushing with (garlic)butter when done :)

Oven Ribs

These are reallymoist and tender! I used EMRILS ESSENCE to season the ribs and then seared on the grill on high heat for a couple minutes each side. I then used my broiler pan with some water in the bottom and put the ribs on the vented tray and covered with SWEET BABY RAY'S. I then used foil to make a tent so it could steam while it cooked for a couple hours. when done , I put some more BBQ sauce on it and put under the broiler for a few minutes to carmelize the BBQ sauce. Fell off the bone goodness!

Mexican Whole Wheat Flour Tortillas

These are good and easy to make! I did end up having to use a little extra hot water to get the dough smooth.I made ahead of time and let the balls set with a damp cloth till I was ready to make them later in the day.If your worried about the frying and rolling at the same time;roll a few out ahead of time(they wont stick to each other if you stack them).

Chicken Enchilada Soup II

My family loved this soup! The only thing I did different was add 1 cup of fresh salsa to give it more color. I also cut corn tortillas into thin strips and baked them in the oven for a few minutes. Then sprinkled grated cheese and the chips on top.

Creole Seasoning Blend
