About this Cook
I have loved to bake since I was a little kid helping my mom in the kitchen, but when I moved in with my husband, I realized I was pretty clueless about cooking (the extend of my meat cooking was the throw a chicken breast on the George Foreman!) I started teaching myself by watching the Food Network and making a LOT of calls to Mom and after a while, I started feeling pretty good about my cooking- and my hubby agrees! I love to test out new recipes and I try to keep things on the healthy side and include lots of veggies!
My favorite things to cook
Anything in the slow cooker or on the grill, risotto, Grandma's spaghetti recipes, brownies.
My favorite family cooking traditions
My family LOVES to celebrate with food! We have traditional foods that we make for almost every holiday and any other occasions always have a full spread of food- appetizers, a home cooked meal and dessert. Almost everyone likes to cook, so everyone brings something to the table and the favorites are frequently requested.
My cooking triumphs
The first year that my hubby and I were away from our families for the holidays, I re-created several of our holiday food traditions. I made my mom's Chimichongas and pumpkin empanadas for Christmas Eve dinner (my family has always done Mexican for Christmas Eve, not sure why!) and I baked a beautiful Monkey Bread for Christmas morning. Everything turned out great!
My cooking tragedies
Once I made a cheesecake that made WAY too much batter to fit in the pan. I didn't realize how much it was going to expand, so I filled it all the way up to the top... needless to say it made a BIG mess and did not look too pretty (but it did taste good!)

Smooth Sweet Tea
Tastes great, I wished it had made more though. I mixed it in a huge glass container so it wasn't even a quarter full.

Pork Chops a la Slow Cooker
The pork turned out really tender and delicious. I made the mistake of not reading the recipe ahead of time, so I didn't have time in the morning to brown the chops. Instead, I just coated the pork chops in the flour mixture and mixed the rest in with the soup (which I used cream of mushroom since cream of chicken sounded weird to me). I wasn't sure how it was going to come out, but the sauce came out nice and thick- like a gravy, so I served it with the pork over rice and my hubby loved it!

Grilled Jerk Pork Tenderloin
This was delicious! The only thing I did different was to omit the habeneros... I know jerk is supposed to be spicy but I didn't have any peppers on hand AND my hubby is a total spicy whimp, so I decided to just go for the flavor without the spice. The meat was SO tender and flavorful and it was perfectly cooked after grilling for 6 minutes on each side. It was just two of us and we polished off the whole tenderloin!
