Eileen's Spicy Gingerbread Men

People really freaked out over these...they swore they were the best gingerbread cookies ever. The cookies came out soft and chewy and kept well for up to a week.

Slow Cook Thai Chicken

it was okay. I thought the chicken got a bit dry, and the sauce wasn't as saucy as I woul've liked. I served it with basmati rice which added a nice nuttiness to the dish. I'll make it again, since it's so easy, but I'll probaby play around with the time and liquid amounts.

No-Bake Granola Bars

Very strange recipe...it tastes really great, but parts of it were crumbly like granola...I think the wet to dry ratio needs to be played around with a little. I did read other reviews and tips but chose to follow the recipe exactly as it was written. I will definitely take others' advice and use less dry ingredients and play around with the add-ins if I make these again...otherwise it tasted really good (although it wasn't exactly pretty to look at!!)

Brownie Torte

My first foray into torte making. It was very good---just like a brownie! I drizzled caramel sauce over the top and sprinkled each serving with some roughly chopped nuts. Everyone loved it!

Mexican Baked Fish

This was great! I used hot salsa to give the dish a nice bite. Also when I went to to fish monger there was no fresh cod so I just grabbed a firm white fish and it turned out fine.

Annie's Fruit Salsa and Cinnamon Chips

The salsa was so good that it could be eaten with a spoon or poured over ice cream! The cinnamon tortilla chips were a perfect addition. I followed a reviewer's advice and dredged the tortillas through the cinnamon sugar to get maximum coverage! I also used an organic apricot preserve in the salsa. Will definitely make again as the summer months approach!

Holiday Chicken Salad

Really great! Very fresh tasting. Small note of warning though: the green onions are very powerful and seem to intensify the next day. Great as sandwich filling on pumpernickel!

Yummy Couscous Salad

I served this as a warm side dish instead of as a salad. I replaced the red onions with carmalized videlias, and lightly sauteed the red peppers. I also omitted the cumin. It was fantastic. I had it cold the next day for lunch--this will definitely be made again!

Delicious! This is a great accompaniment for chicken. The cranberries could easily be substituted for raisins. This will make a regular appearance in our household!

Chicken Dijon

This was okay--I took the others' advice and didn't set the chicken aside and THEN put it in the oven. I took the chicken out of the pan when it was almost done and tented it with tin foil and popped it in the oven (since the chicken still cooks after removed from the pan). I found the sauce really goopy and thick. It wasn't very flavourful and I was a little disappointed. I probably won't make it again.

My husband loves these though I have to admit they're not my favorite. They have a chemical aftertaste that I'm not too crazy about. They do stay chewy for days though...

Fabulous! The scones are HUGE when cut in 8's--you might want to cut in 16's. I added raisins to mine and they turned out great. Will definitely become a family favorite!!

Oven Roasted Red Potatoes

They were okay but not amazing. I think I was expecting them to be more crispy, so I was a little disappointed. If I made them again I would definitely add more spices to give it a zip. By the way, thanks to the reviewers who mentionned using foil on the baking sheet--it could have been a nasty mess to clean up!

Amusement Park Cornbread

I followed other reviewers' advice and increased the amount of cornmeal by 1/2c and decreased the flour by 1/2c. I also added a can of cream corn, green onions, jack cheese, and a pinch of cayenne. Because of the cream corn I didn't have to add as much milk--I went by the way the batter looked and probably put in about a 1/2c or so of milk instead of the amount specified. I made muffins and they took about 25 mins to cook. They were FABULOUS! Will definitely make again!

Cuban Midnight Sandwich

Great quick dinner sandwich. Warning though, I used baguette style sub buns and once they had been toasted in the pan, were so crunchy that when I went to cut into one of them the filling shot out the side onto the cutting board! (I ended up with that one!) I thought the mayo was a bit rich--but that's just personal preference.
