Sweet Teriyaki Beef Skewers

Delicious! I used cube steak cut into strips. The kids literally gobbled it up. Going to try the marinade on chicken tonight and see how that goes. Thanks for sharing such a simple but yummy recipe.

Shredded Tri-Tip for Tacos in the Slow Cooker

This is AMAZING! I have tried a few other similar recipes, but this one far outshines. I am all for simple so I made a few changes using what I already had on hand in my cupboards. I did the rub with Costco's steak rub (because it is so peppery) and garlic, browned the meat, in the Crockpot I put the roast, tomato's and wine. I dumped in a small handful of dehydrated onions and peppers, a few dashes of hot sauce and then let it simmer. YUMMY! Most def. a keeper. So easy, thanks!

Acorn Squash Soup

OMGosh, this soup is to die for! What a wonderful way to use acorn squash. The consistency is perfect, spies just right (I did not use curry because I didn't have any). Definitely a recipe that will be in our regular fall/winter rotation. Did make a few adjustments only because of what I had on hand ~ Used whole milk instead of evap. milk, a few dashes of hot sauce instead of cayenne, and half beef broth/half chicken broth, but really the most perfect squash soup EVER! Thanks :)

Fresh Strawberry Upside Down Cake

So quick and easy! The small ingredient list makes it nice because all of these items are already stocked in the house. Nice to make at the last minute for company. I auctioned this off at the church bake sale last year and the highest bid was $32. Nobody even knew it was from a boxed cake mix!

Double Quick Dinner Rolls

This is my new fav. roll recipe. I put everything in the bread machine to mix. I added a bit of very finely chopped onion, dried parsley and minced garlic to make a more savory roll. Formed balls and put in a pan so they would touch. Put a little bit of melted butter over the top of each one. We had a dinner party and these rolls had RAVE reviews. YUM!

French Pastry Pie Crust

THE best pie crust I have found by far! You don't have to do anything fancy with it. No chilling the shortening, water, bowl, etc and it will still come out perfect. I just used my food processor and it was so easy and come out delicious. Def my new go-to crust recipe!

Kansas City Steak Soup

Very versatile recipe. Great for a starter for me. I have tried it as is, but the second time I changed it up a bit. I like to use leftovers. I used leftover steak and diced up baked potatoes from the night before. I have lots of food storage, so I used dehydrated onions, carrots and celery. I added garlic and thyme to suite my tastes. I also like to add rice to it. I prefer to keep the tomato out, and so do my kids.

Ten Minute Enchilada Sauce

The perfect homemade enchilada sauce. I used the recipe exactly as stated, although I did simmer for 30 minutes on the stop. I made chicken enchiladas for dinner and everyone loved them. The sauce was a big hit. I will not buy the canned sauce ever again!

Southern Seafood Gumbo

Yummy! Super quick, so healthy and tastes great. I use a pound package from Trader Joe's that has a combo of shrimp, scallops and calamari. We served it over some quinoa. I have made it twice so far and it is now a regular in our menu rotation.

Claudia's Yummy Frosting for Cakes and Cupcakes

What wonderful frosting! I love the little bit of salt in it, it gives it that salty/sweet thing in the same bite. Is not too heavy or overly sweet. Was the perfect consistency for spreading. I made it twice and the second time left out the egg whites (worried about salmonella for my little one) and was just as good. Yum,Yum!

Chocolate Trifle

Wow! I have made this several times and got top dollar at our church bake auctions. My daughter used this for her cake at her last birthday and everyone loved it. Everyone is always asking for the recipe. I have made it exactly as described, but I prefer a little less of a sweet overload. In the mouse mixture, instead of cool whip I fold in some unsweetened whipping cream. Yum, Yum, Yum!

Beef Tamales

After reading the mostly great reviews I was very excited, until I ate one after all these hours of preparation. The meat filling was tasty and juicy. It was the dough that was flavorless. I prepared exactly as stated in this recipe. I will not make this again, but at least it gave me a starting point with a good shredded beef.
