Cranberry Pork Roast

I made this last night, and it was a hit! My husband isn't big on roasts done in the crockpot, so I modified this recipie a bit...When the roast was done, I removed it from the crockpot and placed it on a baking pan that I had sprayed with non-stick spray. I then sprinkled black pepper over the roast, and topped it with a thin coating of minced garlic (about 2TBS). I then placed it in a 350 degree preheated oven for about 20 minutes, and YUM! The garlic made the roast less sweet and gave it more of a tang! I served it with a large tossed salad, some onion/dill bread, and mashed sweet potatoes. Nobody ate the gravy, but the roast was DEMOLISHED!

Cranberry Bars

This IS a great recipe! I read some of the other reviews, and the trick to getting the bars out of the pan without them turning into a gooey mess is to LET THEM COOL for at LEAST an hour! The cranberry mixture needs to "jell". My husband and kids REALLY loved these...even my picky four year old~!

Calico Squash Casserole

Another great recipe! I served this to a husband and 2 preschoolers who don't like squash, and it was a huge hit! I've made it twice, and the second time I was almost out of "buttery round crackers", so I used some saltines. DON'T DO IT! It was not nearly as good...I ended up throwing almost half of it away.:) Moral is: USE the Buttery Crackers!

Kids Favorite Meatloaf

I would never have thought of using Wheat Chex in a meatloaf, but this one turned out pretty good. The one complaint I got from everyone (kids included) was that it seemed to be a bit on the sweet side...next time I'll work on the glaze...maybe less sugar.

Cha Cha's White Chicken Chili

OH MY GOSH! This was great!!! I used skinless, boneless chicken tenders instead of the cooked chicken. I sauted them until they were no longer pink, then added the onions, fresh garlic, chiles, and spices to the same saute pan...Then I dumped everything into a big stew pot, and simmered it for an hour or so. I also added about 2 tsps of Chili Powder, and substituted shredded Colby/Jack cheese...This recipe got rave reviews from everyone! I served it with warm flour tortillas, and a huge salad. YUM! Will make this again!.

OH MY GOSH! THESE ARE GREAT!!! I added about 2 tsps of cinnamon...made 40 muffins....even the grouchy old lady who lives next door to us liked them...YUMMMMMMMM

Grilled Pork Steaks with Lemon Butter Sauce

Yum! This would make a great marinade for any meat! I plan on trying it again with T-bone steaks! I marinated the chops for about 3 hours, and had planned on grilling them outside, but it rained, so I broiled them instead. They were EXCELLENT!

Baked Seafood Au Gratin

This is truly a great recipie! My husband loved it! I served it over pasta, with garlic bread and a tossed salad. It's even better the second day! I will definately make this again, but I think I'll halve the recipie...it makes a LOT of food! Tastes a lot like Crab Alfredo served at one of our local "high-end" restaurants.
