Blueberry Scones

Reviewed: Aug. 10, 2002
Excellent recipe! I did substitute 1/2 c. plain yogurt for the 3/4 cream to lower fat and make the dough more managable. Tip: USE FROZEN BLUEBERRIES! When kneading, it will make it much easier and they aren't as prone to pop as fresh. Instead of shaping it into a round, I shaped it into a 16L x 4W x 3/4H rectangle, squared up the edges, cut it into 4 squares, and cut each square diagonally to get a more traditional scone shape. I sprinkled coarse sugar on top before putting them in the oven. They're best eaten within 24 hours of baking. I made them one night to take into the office the following morning. Rave reviews!

Scottish Oat Scones

Reviewed: Aug. 20, 2002
These are the best scones I have ever eaten. Period. I made a few modifications. I added one julienned Granny Smith apple (skin-on), 1 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/8 tsp ground cloves. Before putting them in the oven I also sprinkled the tops with cinnamon and coarse sugar. YUMMMMMM!!! I had to try one when they first came out because they smelled so good, and then I couldn't resist eating another one right away! I took the rest into work *the next day* (how many scones are still great the next day??) and everybody loved them as much as I did. A++++ recipe, thanks!

Greek Pasta Salad III

Reviewed: Aug. 20, 2002
This is an excellent pasta salad. The only change I made was putting in half the red wine vinegar it called for, but that's just because I'm not a huge fan of vinegar. Great recipe, thanks!

English Royalty Chocolate Chip Scones

Reviewed: Aug. 20, 2002
Very flavorful and sweet compared to many scone recipes I've tried. It's great for the sweet tooth, almost more like a chocolate chip bread than a scone. I used 1/2 c. orange juice and I also mixed an egg with the milk, because the dough was quite dry. Also sprinkled coarse sugar on top. Sweet-crazy coworkers loved it - thanks for the recipe!

A Good Easy Garlic Chicken

Reviewed: Aug. 20, 2002
Very tasty, if a tad salty. Just go easy on the seasonings. This is great to make a few days ahead, and then cut up to toss on top of green salads. Thanks for the quick and easy recipe!

Cranberry Pork Chops I

Reviewed: Oct. 8, 2002
These turned out absolutely amazing! I didn't have any marmalade so I used Smucker's cherry preserves. I also used Buckwheat honey, which has a darker, more intense flavor than clover honey. I cooked them for about 55 minutes, and left them in the turned-off oven for another 10 while I made a side dish. The sauce this dish makes is just incredible.

Flourless Chocolate Cake I

Reviewed: Jun. 6, 2003
This was terrific - for true chocolate lovers only! I've never made a flourless cake before but this was a snap. I used a 10-inch springform pan, lined the bottom with parchment paper, and then sprayed the pan with oil. I then used aluminum foil around the springform pan to keep the water bath from seeping in. I ended up baking it for 55 minutes. Served with raspberry puree, real whipped cream, and fresh raspberries, this got rave reviews at the office!

Cream Cheese Penguins

Reviewed: Dec. 19, 2003
These were a big hit at my Department Christmas party today! They were gone less than an hour after I put them out. I mixed 1/3 packet taco dip seasoning into a 12oz whipped cream cheese. It didn't color them much but it made them taste good. Great recipe!

Garlic Mashed Potatoes Secret Recipe

Reviewed: Dec. 19, 2003
The recipe was great, but I found out that I'm not a fan of Romano cheese at all. If you like that flavor, the consistency and texture of these potatoes are awesome!

These are absolutely the best I've ever tasted. Period. I did fry them first to get a nice brown on the bacon, and to get rid of the grease. Great contribution!!
