Apple Pie Filling

I used about 24 cups of braeburn apples, and decreased the water to 7 cups and the cornstarch to 3/4 cup, also added the zest of a whole lemon in with the juice, and a drop of clove extract.Smelled amazing and tasted even better!

Meatball Nirvana

Strawberry Rhubarb Sauce

Jo's Rosemary Bread

I used this recipe in conjunction with my go to bread maker recipe, using a combination of butter 1.5 T, and Olive oil 1T,1 1/8 c water,a whole pkg of yeast, 1.5 c wheat flour, 1.5 c AP flour, 2T sugar,1.5 T dry milk,a t salt. I increased the Italian seasoning to a teaspoon and added 1T of rosemary, along with the black pepper.It rose nicely, but was dense enough for sandwiches. I have always struggled with getting bread just right,but this one was perfect,,

Garden Fresh Tomato Soup

I had a lot of tomatoes from the garden this year, and this was a great way to use them up.I peeled them first, and used twice as much garlic, sauteed garlic and onion in a couple tablespoons of olive oil.I had fresh basil and oregano, so I added about 2 T total. I added about 2 T of tarragon vinegar and 1/4 t cayenne pepper, also put the cloves in a tea ball so they would be easier to retrieve. Used an immersion blender and left the mixture chunky, like a bisque. I topped the bowls with grated Parmesan and a drizzle more olive oil. With grilled cheese, the ultimate yummy lunch!

Garlic-Ginger Chicken Wings

I significantly changed this recipe,and am rating it so I have a record of the changes, because my husband can't stop raving about it.I used 3# of the whole wing, uncut, I put 2T olive oil, 1/4 c hoisin sauce ,2 clove minced garlic,1t poultry magic seasoning blend 1/2 t cayenne pepper, 1/2 t minced ginger,pinch of black pepper, and 1T ground chili paste in a zip lock bag. My wings were still a little bit frozen, so I microwaved them in the bag at 2% power for 3 minutes.I skipped the step of spraying the baking sheet, because I didn't use flour, just used parchment paper. Baked them for 30 min on each side. I made the glaze as per the recipe,awesome,awesome wings

Apple Pie by Grandma Ople

This was an awesome apple pie! I used a old fashioned apple called graven-stein,and added 2 teaspoons of grated lemon peel along with 1 teaspoon of cinnamon. I dotted the top with about a tablespoon of butter before putting on the top crust. I mixed the apples with the sauce after cooking it and didn't use a lattice crust. Brushed egg white and cream on the crust.. served it with cinnamon ice cream,delish!!

Cranberry Almond Biscotti

Great recipe.. I melted dark chocolate chips in a pie tin in the residual oven heat after I removed the biscotti and dipped the cookies on the long flat side. I used cranberries and almonds, but am going to try with mini chocolate chips and walnuts next time

Simple Whole Roasted Chicken

Great recipe! My chicken was partially frozen so I cooked it a little longer than suggested, I mixed the spices with 2 T softened butter, then rubbed it on the chicken.I also turned it over after 30 minutes to allow the breast to brown. Gravy made with the pan drippings had great depth of flavor from the spices..A wonderful Sunday supper

Squash and Apple Soup

I made this on a crisp fall evening for a light dinner.I omitted the potato cause I didn't have any, and used chicken broth instead of water, and added 1/2 t of salt and a T of seasoned rice vinegar.. I blended it in the pot with an immersion blender..no need for additional dirty dishes!Very tasty!

Black Bean Brownies

I have made these several times with the following changes, 3T coconut oil instead of vegetable,1/2 C agave nectar instead of sugar and I added 1/2 C chopped walnuts with 1/2C 68% cocoa choc chips, I also cut down the cooking time so they would be more brownie like in texture. Amazing considering they are gluten,sugar and dairy free!

Filet Mignon with Rich Balsamic Glaze

These were to die for.. After letting them set out at room temp for about an hour, I seared the filets in a screaming hot cast iron skillet for abt 1 min per side, I did use a little evoo. covered the skillet , LOOSLY ( too prevent oven splatter) with foil and put in the oven for abt 5 minutes at 425, meanwhile, I made the balsamic glaze using the addition of a little sugar and garlic as suggested by others, melted the gorgonzola under the broiler for just a few seconds..so delicious..

Raspberry Sauce

I was looking for a sauce to puddle under a slice of cheesecake, so I didn't want a thick sauce,I eliminated the cornstarch, used Grand Marnier instead of OJ, 1/4 c white karo in addition to the sugar, and only 1/2 c water. Cooked over med low heat, stirring , for 10 minutes.. I strained the seeds out , it came out exactly the consistency I needed without that gloppy, cornstarchy consistency..

Chocolate Chocolate Chip Cookies I

Yum, Yum, Yummy! I used 1/2 brn and 1/2 white organic sugars, and half shortening and half butter. Next time I will try using all butter, cause I had to flatten these out with the bottom of a glass dipped in water. They hardly spread out at all in the oven. Chocolatey deliciousness!

Raspberry Ice Cream

Ok, I admit that I changed this enough that it doesn't resemble the original.. But it turned out so great, that I would like to share my changes.. I did use 1C of sugar ( I used organic ) and 3C of heavy cream. I scalded these two, then added 2 beaten eggs, which I tempered first.I cooked ( but not boiled! ) it over low heat, stirring constantly, until it coated the back of a spoon, about 10 min.Then I added 1t. of vanilla. I pureed 3 C of fresh raspberries in a blender, and then pushed them through a sieve to remove most of the seeds. I added this to the cooled custard,and chilled it for 4 hours. I used my kitchenaid ice cream maker to freeze it..VERY creamy, like a frozen custard...and very yummy!

Fresh Berry Coffeecake

I cut this in half for just me my husband..the batter is thick, and obviously does not "pour" so I mixed the berries around with the batter in the pan and spread it to the edge.. I used lemon juice instead of milk for the glaze.. very tasty
