Banana Crumb Muffins

EXCELLENT. I added 1tsp vanilla extract, 1/2tsp. nutmeg, and 1/2tsp cinnamon to the batter. They baked up so nice and look like a muffin from a professional bakery!

Chocolate Chocolate Chip Cookies I

These are FABULOUS. I used 1/2c butter 1/2c shortening as well as dark chocolate cocoa. The batter is like mortar but they bake and cool perfectly. One of my new favorites!

Mouse's Macaroni and Cheese

I have been trying to find the PERFECT mac and cheese recipe and this is it! I followed the recipe exactly and it was wonderful. The perfect flavor and amount of cheese. It is definitely best enjoyed right out of the oven.

Zesty Slow Cooker Chicken Barbecue

Delicious. I used 3 chicken breasts, 9oz of BBQ, and omitted the Worcestershire. I will definitely use the full 12oz of BBQ next time. Leftovers are just as tasty!

Black Beans and Rice

The end result was wonderful but 2 stars because of all the additions I made. Omitted the onion and replaced it with a Tbsp of onion powder. Used chicken broth instead of vegetable. 2tsp of cumin, tsp of chili powder, dash of cayenne, 1/2tsp garlic salt. The bean to rice ratio was off for me. Next time I will use less beans. *Also used a can of diced tomatoes, drained.

Baked Pork Chops I

WOW. FANTASTIC. I did make a few modifications: I used 4 thick boneless chops. I fried the chops per the recipe and cooked in the oven for 45min. For the gravy I sauted half an onion and a tsp of minced garlic in the same pan that I fried the chops. I then added the wine, milk and I used cream of chicken soup. Simmered until bubbly. Added to the chops and baked another 20min uncovered. They are AMAZING.

Chewy Chocolate Chip Oatmeal Cookies

A great twist on a traditional cookie. I increased the flour by 1/2c. and the baking soda by 1/2tsp. I refridgerated my dough for about a half hour and my cookies were perfect. I also omitted the nuts.

Scalloped Potatoes and Onions

The flavor of these was awesome, although the cooking time was too long. I went to add ham 1hr in the cooking time and the potatoes were already mush. Not a big deal though because they still tasted amazing. I did saute the onions in the butter before making the sauce and it definitely brought out the flavor. This is a definite keeper.

Beef Noodle Shepherd's Pie

This was great and I usually don't like Shepherd's Pie. I added some dried onion and garlic powder when browning the meat. I also added a can of mixed veggies and cheddar cheese before adding the potatoes. I will for sure be making this again.

Mini Meatloaves

Really good. My husband said this is a keeper after 2 bites. I added about a tsp of dried, minced onion and a dash of garlic powder. I used a mini loaf pan to bake them and they turned out great.
