Awesome Slow Cooker Pot Roast

Best roast I ever made!!! Because there are only two of us I used a 2.5 lb roast cutting off as much fat as possible, salt & peppered and seared on all sides. Meanwhile in the crock I mixed 1 can Campbell's Crm. of Mush. soup, 1/2 package of dry onion soup mix, 1 can water and 1/2 can of Bourdeau which I already had. This alone is what made the sauce so delicious. Set crock on low overnite. The meat was tender and slightly pink inside with lots of sauce which is great because we love mashed potatoes and gravy. This dish as I made it could compete with any from a nice restaraunt. Its that good! And so easy. All the flavours were just right. I did not add or subtract anything else and it turned out perfect. Will definitely make this again and again.

Dressing for Potato Salad

This is my first time making potato salad and though it was easy and good, it was better after adding chopped celery, chives and 2 or 3 hard-boiled eggs. I did not have green onions so used yellow. Otherwise I followed the recipe exactly. Oh, and it does only make dressing enough for 3 large potatoes. Will probably make this again but next time substitute plain yogurt in lieu of sour cream for a healthier version. Can't wait to try on macaroni salad with grape tomatoes.

Leek and Fennel Soup

I tried this soup because it seemed easy to make and dairy free. I followed the recipe exactly but used only 5 cups water. Didn't have bouillon cubes but had the jarred kind and added to taste, about 3 tsp. Had some Ghee on hand and threw in a tbsp. The flavors were much better mixed together with a hand blender as others had suggested. It was really difficult leaving the last bowl to a friend because I couldn't stop eating it. Definitely doubling this recipe next time and try garnishing with carrot shreds.

Pesto Polenta Lasagna

Made this for an office Christmas party and it was a hit! I used two layers of polenta and added a layer of fresh spinach w/minced onion sauteed in olive oil plus a layer of cottage cheese as others suggested. The pine nuts gave it extra texture but next time I may omit due to cost. Cook time was about twenty minutes longer than specified but result was a very easy flavorful dish I look forward to making again!
