Cheesiest Potato Soup

I took the advice of others and doubled this recipe -- other than that, I made it according to the directions and it was FANTASTIC! The whole family loved it! We served it with grated cheddar and bacon bits to sprinkle on top. If doing it again, I'd cut back on the broth just because I'd prefer a thicker soup, but you can't improve on the taste!

Chicken Milano

This was delicious! Our whole family liked it -- from the 13 year old to the 74 year old! We decided that we wanted more sauce, so we added an extra cup of 2% milk to the heavy cream. We also had 1.25 pounds of chicken. We also used olive oil in place of the vegetable oil. It was fabulous!

Daisy Brand Quiche

The PERFECT Quiche recipe!! I did leave out the peppers, just because I'm not a fan. I added a slight sprinkle of nutmeg, but not enough to measure. I loved it and will make it again!

Tilapia Soft Tacos with Chipotle Cream

I made this by the recipe and we LOVED it! I almost didn't add the cinnamon, but went ahead -- it added a nice unique flavor! We will definitely do this one again!

Hot Onion Dip

I've been making this recipe for years and am often asked for the recipe. The only difference in how I've made mine is that I use a bag of frozen onions instead of the fresh onion. Another tip is to lightly microwave the cream cheese for easier mixing before stirring in the other ingredients.

Tuna Lime Tostadas

The adult members of our family gave this a big thumbs up. We loved the fresh and light taste that the lime and cilantro gave the tuna -- way beyond plain old tuna salad loaded with mayo. The kids weren't huge fans, but we'll just make it for lunch when they're at school! I also loved how easy this was to prepare. I made it by the recipe -- possibly adding a bit more onion than it called for. It was delicious!

Baked Halibut Steaks

Our family was divided on this one. Half gave it a thumbs up and the others weren't as impressed. Maybe it had to do with the fact that we had to substitute tilapia for the halibut . . . . We did marinate the fish in Italian dressing as someone else had suggested. Perhaps I'm just not a fan of baked fish -- I prefer mine with a drier texture.

Quick Classic Gazpacho

I made this for an International Lunch for my son's 5th grade class. Most of the kids were leering of trying it, but those that did said that it was good. It was the adults who all wanted the recipe! This one is a keeper. Even my son liked it. We did only use one half of a jalapeno since we were making it for kids, but it tasted great!

Vegetarian Split Pea Soup

This soup was good, though a bit spicier than I anticipated since I'd never used the dried chipotle chile pepper (which I found in the spice aisle). I would cut way back on the chipotle if I made it again since my kids wouldn't eat it due to the spicy nature. My husband and I thought it was tasty though.

Spinach and Bean Casserole

Our family really enjoyed this recipe -- including our 6 year old daughter. I might cut the salt back just a little bit. I also didn't have the fennel seed (and am not a big fan of it) so I just used an equal amount of Herbes de Provence. It was a really hit and we'll be cooking it again!
