Absolutely Perfect Palak Paneer
This was great! I do have to agree with the others - WAY too much spinach, but I adjusted the spices and sour cream to match the amount of spinach used. This amount made about 10 servings. Also had problems frying the ricotta - will use paneer next time, but this was the best Palak dish that I've made, and will use it for years to come!

Baked Spinach
Great meal! I changed a few things - used skim milk, reduced calorie margarine, mixed the eggs with the milk, but it was essentially the exact same recipe. My husband and 11 year old son loved it!

Shiitake Scallopine
Was a hit! I only used about 8 ounces of non-marinated artichokes and added about 5 fresh medium tomatoes. The family loved it!
