I cut up carrots, onions and potato and put on the bottom of the slow cooker. I then put in a shallot in the cavity of the chicken. I separated the skin from the breast meat and rubbed in garlic and a bit of seasoning salt. I seasoned the outside with paprika, pepper, more seasoning salt and placed on top of the veggies and away it cooked (about 8 hours)...everything turned out great! I made mashed potato (boiled up more potato)by adding the slow cooker potato's to the boiled potato's--had wonderful flavour! Definitely easy and will make again!
