Zucchini Bread VII

Reviewed: Jul. 6, 2012
This recipe had good taste, but not what you'd expect of a good and real zuchinni bread. It was missing the cinnamon and nutmeg I like, and the texture was much too light, fluffy and airy (for my personal taste). When I make zucchini bread I like the loaf to be moist (like this bread), but also dense enough enough so it wont fall apart as I cut. Maybe not sifting the flour would help?!!

Buttermilk Honey Wheat Bread

Reviewed: Feb. 21, 2012
I'm not an expert bread maker, but have made plenty and this is the first I've had problems with. First there is too much buttermilk or too little flour. You'll have to add about an extra cup just to make a dough consistency, otherwise it's more like a muffin batter. Second, it did not rise very well the second time. Third, After baking for the full time and cooling on the rack it looked beautiful, but them the dome collapsed overnight. The bread had more of a soggy muffin type texture. Very strange. I think it need more whole wheat flour for the gluten. Maybe someone could do 1/2 wheat and half all purpose to give it the spring it needs. As for me I will not be using this recipe again.

Slow Cooker Pulled Pork

Reviewed: Dec. 19, 2011
Delicious!!!!!! I also used a pork shoulder that was 2.5 lbs (much cheaper) and cooked it for about 8 hours. after shredding I placed back in crock pot with a ladel of root bear I reserved while draining, then added about 3/4 of an 18 oz bottle kraft honey BBQ sauce. Afraid it would be too sweet with the whole bottle. SOOOO good. My 3 and 4 year old loved it and they usually hate trying new things. Can't wait to try this recipe with different flavors BBQ sauce.

Snickerdoodles I

Reviewed: Nov. 28, 2011
At first I thought the dought was a little dry (kinda crumbly) and I had to 'pack' balls of dough instead of rolling them. I also made the balls about 1" in size and cooked them for about 12-13 minutes. They are perfect! a little crisp on the outside, but soft and bread like on the inside. YUMMY!

Marshmallow Treats

Reviewed: Nov. 4, 2011
Very good and simple recipe by itself. If you want something different and festive try doubling the batch and adding a 3 oz package of any flavor jello after marshmallows melt. Then stir in rice cereal like normal. Also, dont dirty a pan. Just plop the mixture onto a sheet of wax paper, butter your fingers and shape with your hands. It's simple to do, quick, and will make cutting the treats into bars much easier/neater. plus you dont have to clean up a pan.

Amish White Bread

This is the first bread recipe I made at home when starting out at home. It is super easy and has the tast and texture of 'grandma sycamore's' bread that you find in stores.

Lentil Chili

Reviewed: Sep. 15, 2011
taste was okay. i used exact ingredients and followed directions but ended up having to double broth because when with cooking time the 'chili' had the thickness of a pot of cooked rice. Not one drop of broth left and the lentils were still not cooked through. Maybe I did something wrong

Hot Peanut Sauce

Reviewed: Sep. 14, 2011
"This is superb!" said my husband. and I thought so too. The only thing I would do is cut back on cayene pepper by half if you have small children (or maybe totally cut it out for kids). Only thing I did was add 1/2 tsp. minced garlic and let sauce sit in fridge until I was ready to use. went great over noodles with chicken, broccoli and bell peppers. yummy!

Pineapple Zucchini Loaf

Reviewed: Aug. 8, 2011
Made these into muffins this morning and it was delicious. The only thing I did different was cut the oil to 1/2 c and added 1/2 c applesauce to reduce fat. turned out wonderful and moist. Good muffin for breakfast but very sweet. will probably reduce the sugar to 1 1/2 cups next time.

ABC Muffins

Reviewed: Jun. 1, 2011
I had high hopes after tasting the batter. followed recipe exactly and baked for 22 minutes. I bake different muffins @ least twice a week and this recipe produced some of the driest I've ever had. They crumbled apart at the bottom when removing them (pan was greased). Maybe if you use muffin liners you can salvage a whole muffin.

To Die For Blueberry Muffins

Reviewed: Apr. 5, 2011
Scrumptious!!!!!!!!!!!! I had to use frozen blueberries & it turned out great. I made 3 batches the first time I made this, but was only able to fill 6 muffin cups for each batch. I only had to use 1 batch of the topping to cover all 18 muffins...and still had some left over. Using applesauce instead of oil works well too.

Bacon Cheese Frittata

Reviewed: Mar. 28, 2011
This recipe was very good. The only reason I give it 4 starts is because I found that the bacon made it too salty for my family's taste. Next time I'll add half the amount of bacon and add some more fresh ingredients (spinach, tomatoes, or mushrooms).

Curried Egg-white Salad Sandwich

Reviewed: Mar. 28, 2011
I give this recipe only two stars. Possibly because I had high expectations from the reviews, but more because the it had a bitter taste. I think I would have been better off just using egg whites, mustard, mayo and some salt and pepper. The vinegar was too much with the curry. I love egg salad sandwich and this is definitely not a great substitute. adding maybe only 1 egg yolk would have made all the difference in the world.

Easy Granola Bars

Reviewed: Mar. 25, 2011
I love this!!! It didn't come out sticky like some recipes but also came out chewy like I like it. Nice gentle sweet taste and easy to make. Would be great made just as recipe indicates but I played around to get some more protein. This is what I did: only use 1/2 coconut no almonds (didn't have any) 1/2 carob chips instead of chocolate chips added 1/2 cup wheat germ added 2 scoops vanilla whey protein powder. Yummy! Again this is just what I did to play around to get more protein. The original recipe is just as tasty.
