I work a little, volunteer a LOT, and study plenty. So when I get some time to cook, I really enjoy myself. I see recipes as more of a guide than an assembly kit. Many evenings I will take bits over 3 or more recipes to make just the right dish, and I might tweak the cooking method and temps to see if the favor and texture is the best I can do.
My favorite things to cook
I love making main dishes, steaks with mushrooms in wine sauce, pork chops over a concocted stuff with fruits and vegetables, and many types of fish. Rainbow trout is one of my favorites. Honey plays a big part in many recipes, as well as a touch of cajun spices. I love to cook with wines, natural sugars, cinnamon, tumeric, basil (the plant is in the window), and plain old salt and pepper.
My favorite family cooking traditions
Grilled cheese and tomato soup. Soothes the savage beast.
My cooking triumphs
I roasted a turkey in a brown grocery bag stapled shut. I was amazed that the juices didn't soak through. Instead the bird came out both crisp on the outside and moist inside.
My cooking tragedies
Trying to make deep fried oreos and twinkies. My daughter came up with this idea while on vacation. We made it up as we went, with just ingredients in the cabin. Interesting, but doubtful if I'll repeat it. Mostly it was a bunch of fun.
