Scalloped Potatoes and Onions

The best! My lactose-intolerant family doesn't even miss the cream of traditional scalloped potatoes and I certainly don't miss the calories and fat!!

Sugar 'n' Spice Nuts

Perfect blend of sweet/salt. Made and gave as teacher gifts--they all loved it. I packaged the nuts in clear disposable icing bags tied with a ribbon and a cute tag. I used the mixed nuts in the giant jar from CostCo--no peanuts, thank you.

Chai Tea Mix

The yummiest. Just like from a coffee stand. I've gotten all my friends hooked on it--some who have never even drank chai tea before. I used Splenda in place of sugar and was still perfect.

Quick and Easy Alfredo Sauce

I was so pleasantly surprised how good this tasted. I used all fat-free products and nobody missed their "fat". I only used half for my recipe and stored the remainder about a week in the fridge--still tasted good after reheating--and most importantly, still kept its texture.

Healing Cabbage Soup

I was just looking for some easy, quick soup that had cabbage in it. I also was coming down with a wham-dinger of a cold. Wouldn't you know, this did the trick. It was quick, easy, DELICIOUS, my kids LOVED it, and my cold was gone in the morning!!!

Incredibly Easy Chicken and Noodles

This is always my standby when cooking for picky people. I have yet to offer it to someone who hasn't loved it!! Even the pickiest kids love it. It's a real comfort food for us.

Asparagus Oregenato

We loved this recipe. I served it with grilled steaks. It was perfect. I'm sure I used more Parmesan cheese than the recipe called for--but when it comes to cheese, the more the better, right? One tip--use fresh grated Parmesan. The stuff in a can doesn't melt well.

Fruited Ice Cream

I have been searching for an easy, delicious, and fail-safe ice cream recipe. I think I've found it. We all devoured it. I didn't have any fresh strawberries so added 1 tsp mint extract and some shredded chocolate. It was the best!! I have a small ice cream maker, so I halved the recipe--still worked great!!!
