Sweet Potato Pancakes

Reviewed: Jan. 8, 2013
This was good. I did make a few modifications as suggested by others. To make the recipe dairy-free, I changed the yogurt for applesauce. The batter seemed a little thick to me so I added some apple juice to thin it down. I did not add the molasses this time, but want to next time. I did add a little honey though. This is so yummy with maple syrup or honey. Will most likely make again.

Donut Muffins

Reviewed: Dec. 21, 2011
I cut the nutmeg down to 1/2 tsp per reading other reviews. These taste completely different hot than they do after they've sat and completely cooled. They do taste just like the cake donut holes you buy at the store. For me personally, I think I would try the nutmeg at 1/4 tsp the next time. I also put a vanilla glaze over some and also put jelly filling in some. My muffins didn't rise though, not sure why.

This was good. I'd probably scale back on the sugar a tad next time.

Mom's Squash Casserole

Reviewed: May 1, 2010
This was wonderful. I did however, make some changes. I left out the eggs because I don't like that texture. I added some garlic and pepper and a little onion flakes to mixture before putting over squash and onion. For topping I used crushed crackers and shredded cheese. YUMMM I'm wondering what it would be like to add some green pepeprs.

This was a little sweet for me, but that's something that can be changed. The kids and hubs loved it.

Gingerbread Coffee

Reviewed: Feb. 2, 2010
Umm, wow. I really had my doubts, but this tastes good. Tastes like gingerbread coffee to me. I didn't however, have half and half, so I used Heavy cream... still great that way too.

Honey Oatmeal Cookies

Reviewed: Jan. 21, 2010
These were yummy! i made these two different ways. Once as directed and the next time I didn't have any honey so I used molases instead. I added a little cinnamon to the molasses cookies and they were wonderful! I also used whole wheat flour. My cookies were kinda crumbly, but they tasted SOO good. We're on a no refined sugar diet and these hit the spot!

No Bake Chocolate Oatmeal Cookies

Reviewed: Jan. 20, 2010
These were great! We started a no refined sugar diet and we were looking for a yummy treat. This tastes so good my hubby really liked them this way. We ran out of syrup so we used 1/4 cup syrup and 1/4 cup honey. Next time I will probably leave out the cinnamon.

Pizza Crust Fantastico

Reviewed: Jan. 11, 2010
I can't truly review this because I used whole wheet flour and corn meal for the recipe. I also had to keep adding more flour to it. With all that though, it still turned out the best whole wheat crust that I've made so far. It was really good.

According to my husband this turned out great. However, my kids thought it was too hot, so I might try it without the red pepper flakes.

This was REALLY good. And very simple. I used garden tomatoes that I canned and put everything in the crockpot to cook all day. Turned out nice to eat with salsa chips.

Clone of a Cinnabon

Reviewed: Dec. 25, 2009
This was actually quite easy to make. I followed all directions, except I put mine in the frig after I rolled them up and put them in the pan. Then I sat them out for 30 minutes the next morning and baked them on 350 for 25 minutes. I also flipped as recommended by others. They were great, but I didn't really care much for the cream cheese topping, but that had nothing to do with the recipe probably, just personal preference.
