Outrageous Chocolate Chip Cookies

Love the combination of chocolate, peanut butter and oatmeal. I use crunchy peanut butter for a better texture and the oatmeal gives them an even yummier flavor. Followed the recipe and didn't change anything. They are one of the best chocolate chip cookies ever!

Stuffed Green Peppers I

Yummy! Made these in a cinch. Didn't have any cheese, but they were still tasty. If I had the time I would have roasted the peppers first for a deeper flavor vs boiling.

Simple Whole Roasted Chicken

If I could give it a higher score, I would! It was delish! I didn't have any vegtables in the house, but it would also have tasted great with apples. I followed the directions exactly as posted and it was a big hit in our picky eater home.

Shrimp Scampi III

Loved this recipe! I did add a couple of changes though. I added a generous sprinkling of lemon pepper, parsley flakes and instead of butter I used olive oil. After you boil your pasta, you can add the water from the pasta instead of bread crumbs. I probably used about a cup of pasta water.

Fluffy Pancakes

These were quick and loved the simple ingredients. They are also great with chocolate chips in them. The only thing I changed was add a teaspoon of vanilla and a little more milk. Yum!

Soft Oatmeal Cookies

Okay...I have made plenty of "oatmeal cookies" in my day. I was very pleasantly surprised how great these ones tasted. I added raisins, that I had presoaked and some crushed peacans. Very good!

Peanut Butter Kiss Cookies

I made these for an office party and they all loved them! I adjust the recipe just a smidge. I add 1/4 c. flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1 teaspoon of vanilla and a dash of salt. Instead of 1 cup of sugar, I add 1/2 cup of brown sugar and 1/4 white sugar. The brown suger sure makes a difference. This makes the dough more pliable.

Chili-Lime Chicken Kabobs

I didn't make this on the grill, because we ran out of fuel. I marinated onions, green and yellow squash, peppers along with the chicken for only 1/2 hour. It was fabulous! The vegtables were just as tasty as the chicken. I cooked it in a non stick skillet and I got rave reviews from all my family.

I am also from Colorado. Maybe the baking powder needs adjusting for the ones who live in lower altitudes. Our waffles came out perfect.

Tres Leches Cake

I thought this cake was exceptionally yummy! It didn't look as nice as the one pictured, but was delicious all the same. The cooking time on my cake because of the high altitude was 40 minutes. I also left it in the the glass dish it was baked in. I just let it cool completely before pouring the liquid in.

Too Much Chocolate Cake

Wow! This is so simple and foolproof that it is a great cake for kids to make. I only had a half a cup of sour cream, but had about 1/2 cup of ricotta cheese. Worked great!

White Chocolate and Cranberry Cookies

I make cookies for the visitors in our church. This one was the most requested cookie during Christmas. I added 1 cup of walnuts, replaced the brandy with 1 teaspoon of vanilla.

The Whole Jar of Peanut Butter Cookies

Great recipe! I tweaked it a bit by reducing the butter/margarine by 1/4, deleted the peanuts (thanks to the extra crunchy peanut butter) and used just the two eggs and deleted the yolk. They came out yummy!
