I admit... it has been a while since I have blogged. I have no excuse, other than I haved suffered from The Winter Blues! I can see all the heads shaking and the sneers.... the unspoken thoughts of some of you in the nethers regions covered in snow up
to the wazoo... " for goodness sakes girlie... you live in South Carolina... come visit the real winter"! I know ... I know!
Time for me to shake the blues and get back to the world of the living! It didn't hurt that we had a 79 degree day. I was able to open up the house and get some fresh air in... for the first time in a while I felt a glimpse of hope, that spring is right
around the corner!
Through the cold months... outside of Thanksgiving, Christmas and New Years.. my kitchen has been sorely neglected. I have found that Jim has been doing a good bit of the cooking and my baking motivation has been deminished with the turning of drab, dreary,
old man Winter!
Well... now, what is this old girl gonna start with?
I had Audrie with me today...for those of you who don't know my Angel... she is the little 4 yo. that I have kept since birth. ( I know..can you believe she is four already!) She is my baking buddy! She has been at my side in the kitchen since she could
hold a spoon and stand in a chair at the kitchen counter.
I asked my little Angel if she was up for some baking... before I could get the question out of my mouth, she was off the couch, ignoring the Sophia the First cartoon that she adores, and pushing her chair across the kitchen floor to take her place at
the counter! Well... I took that as an emphatic yes!
Scouring the remnants of baking ingredients, that were scant in the pantry... we came up with a half of a bag of coconut, a half of a bag of mini chocolate chips, and some Marshmallows from our last camping trip. Well that's a good combo there! Last week
I remembered saving a recipe for Almond Joy Candy! It was meant to be!
Once into the start of the recipe... I quickly realized that this is Not A Kid Friendly Recipe. Sure Audrie loved watching the marshmallows melt in the pan... but she couldn't stir it. She wanted to help stir in the coconut in the sticky glob... but it
was to thick and difficult. Once mixed and my thumbs tired from stirring with a wooden spoon... it had to cool in the fridge. For me , I was grateful for the break... for my little chef... that was the longest 30 minutes of her life!
Great... now it is cooled and ready to roll into balls... Are you kidding me? This stuff was like Taffy! Well again, the dissapointment shows on my little cherubs face! I gave her the, all important, task of separating the Almonds out of a can of mixed
nuts that I found at the back of the bakers rack. That was actually fun, she would hold up a nut and ask the name of it and of course had to give it a taste... by the time we had Identified all of the nuts and the Almonds sucessfully separated... the goo
was rolled into their specified size, more or less, ok they were rolled...
Audrie placed one Almond on each goo ball as I melted the chocolate. I saw the anticipation on that sweet girls face of getting to help dip those candies into the bowl of chocolate.... Well guess what? Once those cooled goo balls hit that wam chocolate...
sticky, stringy mess occurs... again.. dissapointment washes over the sweet, beautiful face! Ugh!
Once the candy is coated... back in the fridge they go to set the chocolate.. you got it... severe devastation to my 4 y.o. baker!
After all this... Audrie and I got to spend time in the kitchen, and through all the lack of a kid friendly recipe... her smile with the first bite of our creation... was all worth it!
