Pork - A -Palooza!

Diving into freezer this morning for dinner options... Guess what I found? A Five pound Pork Tenderloin... First off I imedialtely wonder... Why in the heck do we have such a large piece of meat in our freeze? It's just the two of us here... and if we
are expecting a family function we purchase those larger cuts prior to.
Jim is working out of the house now, much to his shegrin.. and my delight, I now have access to him when the opportunity presents itself... instead of me forgetting these " Oh so important issues", until he gets home! After waiting for him to get off
the phone... I present him with this large hunk o' pork... and ask... why and when did you buy this?
For those of you who don't know my Obsessive Compulsive food deal Hunter (OCFDH dissorder ) seriously I'm sure it is a real disease! My love... Looks at me and states... 20.00 pork loin for 8 bucks ... need I say more? .... UMMMM well no!
What the hey... let's see how many meals we can get outta this freezer find.
Logged onto AR... and what is the recipe of the day? Bacon Wrapped Pork Medalions! ( Ah... The cooking Gods are smiling down on this girl! ) Now what to do with the rest?......... The Man of the house is a huge fan of barbecue sandwiches and I of rice
and hash. Alrighty then... there's my meal planning... Bam .... Done!
