It's been a long hot summer already!  Too hot to cook, too hot to grill, too hot to bake and too hot to shop... what's there to shop for if I'm not cooking?  Needless to say... the pantry is bare!

I collected my little Audrie at 7:00am... we had our breakfast and watched a few "toons", then we walked outside to check on our garden and felt an odd feeling... What is this?  Overcast, cloudy day with 80 degree temperatures! 

Now these hot days are not only affecting my kitchen time... it is also wearing on Jim!  He is in the car and on appointments all day long.  When he gets home he is so exhausted... he changes into shorts and tee shirt and plops onto the couch!

Today, Audrie and I decided to make something special for our hard working "Pop"... Now he loves chocolate... so off to the pantry we go...

No cocoa...OH NOOOOO!

What I did find was some instant hot cocoa packets we take with us camping!  Ingredients on the package are... cocoa, sugar, salt, mini dried marshmallows, and you know... the chemicals that preserve it for shelf life.

Sounds like chocolate pudding to me.... so here is what we came up with...

4 packets - instant cocoa mix
1/4 cup cornstarch
3 cups milk
3 tbs. butter
1 tsp. vanilla extract

Mix the cornstarch and the cocoa mix in a medium sauce pan
Gradually whisk in the 3 cups of milk
Over medium heat stir constantly and bring to a boil
reduce heat and simmer, stirring occaisionally, 4 - 5 minutes until thick
remove from heat and stir in butter and vanilla
pour into 4 dessert bowls or into two red wine glasses like I do ( "Jim" size dessert)

Thanks to the cooler weather... Audrie and I got some Kitchen time and Jim is gonna get a well earned chocolate Goodie! 

This is what we do... when we don't have Cocoa!  ( oh by the way... for those of you who follow my blog... July 11th was my one year anniversary of quitting smoking!  Yay me! )

I know what you mean about the heat. The good news is I have lost 3 lbs. I haven't had chocolate pudding, gosh, since I was in school (and we will NOT discuss how long ago that was.) Don't you just love it when you successfully McGyver something? ~~~ Congrats on the smoking! I knew you could do it. It will be 7 years for me in Nov. and strangely, I have developed an allergy to smoke. My eyes swell and I get all congested. You keep strong now!

Thanks BSM! Audrie and I played in the yard most of the morning! She loves the outdoors... we played croquet and Bocci ball! Thanks for the support early on when I quit the smoking... you and everyone else here really helped make it easy!

Marianne... I know! It is hard for me to believe... but it's true! I quit on my youngest son's 23rd birthday... he turned 24 yesterday! He likes his birthday gift from his mom!

By the way... I didn't gain a pound... did't lose any either though... I'll take that! Jim loved his Pudding!

Terry-congrats on quitting smoking. You and Audrie always find time for fun. It has been very hot here in Colorado, too. I don't feel like cooking much either. Well enjoy the summer days.

Terry, glad to hear that you're surviving the heat! Seems when I DO look at the weather in the "East" it's as bad as what we usually deal with this time of year! Today cooler here than at mom's in MI! Be well, friend, and stay smoke free!

Terry, wish I could wrap my brain around "so easy," just seems like a momentous effort... Some days I don't do too bad, but of late... Would sure help my "budget" (which is non existant!) if I could quit! Be well, friend, and keep on plugging along!

The pudding sounds yummy; I'm definitely going to try that! Congrats on your one year no smoking anniversary; I celebrated my 30th in May. When I quit cigs were $0.60 a pack; you could buy a whole carton for less than the price of a pack today. :)

congrats on the smoking! I had to puncture a lung and break all my ribs to accomplish that. You clearly have more will power LOL

Great accomplishment, Terry! I come from a family of smokers though I never smoked myself. I've always been afraid of the addiction knowing I'm not strong on willpower, LOL. You have already added time to your life by quitting. Keep up the good work!

Bravo Terry! 1 year smoke free. 25 years for me. Cigs were $1 a pack when I quit and I thought that was sky high. I bought a move back to the Midwest from Idaho with the money I saved.

Nancy... my whole family smoked except for my mother... out of 5 children in my fam... me being the baby, we've all quit but my oldest sister! She turns 65 this Dec. maybe she'll be ready then!

About Me
I was a working mother of 2 boys! I didn't have much time for cooking... now that the boys are grown and on their own... I have been enjoying learning and appreciating the art of cooking. I started with a day of baking with my mother in law and I was hooked! Not to mention my new stepkids... what was two... now is four! My husband and I have great times cooking meals together! When the kids come to visit we let them request their menu of choice. Funny twist... my two boys request Jim's culinary feasts... Jim's two request Stepmom's dinner delights! Works out fine at the end of the day!
