With the holiday approaching, I along with so many of you would like to share... what I'm thankful for.

For starters... The Hubby!  The Kids!  The Adorable grandson! And all of my family and friends!  Stock answer right? Now that we got all the major players in my life sufficiently thanked, shall we proceed to my other loves...

I am so thankful for baking... This is a gift ,that  not all can accomplish but. many can achieve the benefits of The Joy of Baking! (Didn't someone write a book with that title? )  I just pulled a cream cheese pound cake out of the oven... !

Mixing of the butter, cream cheese, and sugar alone is a beautiful sight.

The addition of the eggs alternating with the flour... only enhances the gorgeous batter.

Then I add the, exquisite smelling , Vanilla extract...

90 minutes later... out of the oven... cooling in pan on rack...

Seeing Jim's face with the first bite.

Now this all sounds so simple.  I am truly thankful for the therapy that my love of baking affords me...and also the gratification that its' therapy affords my hubby!

The only problem is... my motivation for baking today was to welcome a new family to the neighborhood... Gonna have to make another cake and a few cookies to send as a welcome... the whole pound cake offering is not gonna happen!  Maybe a chocolate pound cake in the am.

A few Slices of Cream cheese pound cake and a few slices of chocolate with a dozen of cookies thrown in... way better than a whole cream cheese pound cake... right?...  *Not to mention the fact that a whole chocolate pound cake hasn't made it's way out of my kitchen in years!*...  Just more baking for me!!!!!!

Happy Thanksgiving!  I know it's a tad early... but with family holidays... I didn't want to forget my AR family whilst I'm busy with my own!

Happy Thanksgiving to you, too! I sometimes think of baking as therapy; other times I feel like it's a chore. The times it feels like a chore is when I HAVE to bake something and it's not what I would want to bake. Thankfully those times are very few and far between! Reading this made me hungry for a pound cake - a chocolate pound cake! :)

Happy Thanksgiving! I was pulling a Cream Cheese Bourbon Pecan pound cake out of the oven at about the same time. I have no idea why but I just LOVE watching 3 sticks of butter and one brick of cream cheese become light and fluffy in 10 minutes of beating... guess I'm addicted to fats and sugars~lol, or maybe it's that I only make these cakes in November and December and it makes me feel nostalgic- whipping in LOVE with the air that leavens the cake, so when I give a cake I'm giving love... I'm trying to get a head start on baking the love, it turns out pound cake freezes well and hopefully that will ease my stress when I'm in the thick of the holidays... hope so anyway! :)

MA, I decided on a carrot cake... I have this problem of forgetting that I have carrots and find myself at times with 2 or 3 mostly full bags... had to use em up before they go bad! Smellin' soooo good in the house!

Goodfood, Now I need the recipe for the cream cheese bourbon pecan pound cake! About the cream cheese and butter infatuation.. I'm right there with you! After the 10 min. I always make my hubby come and see how beautiful it is! Even after the 50th time... he always say's " That is so beautiful Honey!" Gotta love a man that does that for you! lol... He's the best!

It came from Southern Living Magazine many years ago. They did a really great "pound cake primer" that year which gave additional tips like whipping the fats for a longer period of time, etc. I think the bourbon adds a wonderful flavor, but for my cake I add 1 Tablespoon vanilla bean crush instead of 1.5 teaspoons vanilla. I also make a glaze of dark chocolate chips, bourbon and vanilla melted together in the microwave. But then I have to let it sit a day before serving or the effects of the alcohol won't have evaporated. Happy Thanksgiving Terry. Among many things that I am thankful for I am also thankful for people, such as you, that welcomes a new family to the neighborhood. It just seems that it's not done that often anymore.

About Me
I was a working mother of 2 boys! I didn't have much time for cooking... now that the boys are grown and on their own... I have been enjoying learning and appreciating the art of cooking. My husband and I have great times cooking meals together! When the kids come to visit we let them request their menu of choice. Funny twist... my two boys request Jim's culinary feasts... Jim's two request Stepmom's dinner delights! Works out fine at the end of the day!
