Since my son's wedding, I've been thinking of my mother a lot. She passed away in June. She left me all of her cookbooks and her recipe files. When I miss her, I'll go through those files. I see her hand writing of some of my childhood favorites. I
can almost see her in the kitchen and smell the most wonderful, comforting aromas, wafting through my mind. I am the youngest of 5 children but I always thought I had Mom all to myself, My sisters and brother would go to school and I got to stay home.
I remember helping her shop for our meals in the open air Markets in England. (We were military) I remember helping her bake... I still have a scar on the back of my hand from being a tad eager to get to her wonderful coffee cake! Mom is my inspiration in
a lot of my Two Rock cooking... She is the original Two Rock soup guru! She provided 3 meals a day on a very tight budget.
People always cringe when I admit my favorite Mama meal... Mom called it freezer pot stew...She kept a milk carton in the freezer, and would put the left overs in until it was full. She thawed the container out , put the contents into a large soup pot, and
add a large can of tomato's. The stew always seemed like a surprise to me and always turned out tasting the same.... Yummy!!!!
