Actually Delicious Turkey Burgers

This recipe works quite well. I used 2.5 lbs instead of 3 to make use of 1.25 lb. Jenny O turkey packs, and I Formanized the meat instead of cooking the patties on a medium skillet. Result: juicy burgers without most of the fat. Thanks!

Easy Key Lime Pie I

I completely agree with naples34102's modifications to remove one egg and add about 1 1/2 tsp. of key lime zest to each pie. I actually took this a step further, substituting two of the yolks for egg whites to cut down the number of calories. The results were delicious. Next time, I'm also considering cutting one of the cans of sweetened condensed milk in favor of evaporated. We'll see how that goes.

Grilled Beef Gyros

This recipe comes together nicely in 40 minutes if you skip the marinate step. The cucumber sauce was very yummy, and the recommended fixings work very well. However, I'm knocking my review down to four stars because said marinate step isn't expressed in the "Ready In" time and because several steps are irritatingly batched together. Otherwise, this recipe is terrific!

Balsamic Chicken

Easy As Chicken Pot Pie

I doubled this recipe, making the recommended substitution of half the specified milk for low sodium chicken stock. I also made two pies, one with celery substituted for the peas. The peas offered a much better flavor, of course. I also highly recommend just making the filling and serving this with bread sticks, as I accidentally did. The results were subversive, tasty, and well worth making again.

Best Ever Jalapeno Poppers

I used sliced jalapenos instead of halved and 1/3 less fat Philadelphia Cream Cheese to lower the heaviness of the recipe, then pan-fried the shaped poppers in olive oil. The results tasted phenomenal. My only problems were keeping the poppers shaped in the pan and, afterwards, keeping my roommates from wanting more.

Turkey Dumplings

This recipe is terrific, but as mentioned, requires modification. I added a teaspoon-and-a-half of chicken bouillon, celery, and garlic pepper to taste, using the saltiness of the bouillon to make up for seasoning. The dough came out just a little underdone at the low heat of my stove (yes, even for dumplings), but a quick zap in the microwave perked it right up. Cheating, but it worked in a pinch. Thanks for the good eats! And for those reading this review, happy modding!
