Thin Mint Cookies

Inedibly bad. First off, they need to be thinner (I made them varying thickness, but I'd say go with about 1/8 inch). Secondly, they need to be crisper. They were doughy like a brownie. So cook them longer (or don't use this recipe). And thirdly, the mint taste wasn't right. I used mint extract, btw, not peppermint, as some reviewers suggested. The chocolate coating didn't save them at all. I tried some totally covered in chocolate and some with chocolate drizzle. The problem was the cookie to start with.

Southern Red Velvet Cake

I made the recipe exactly according to the recipe, except maybe not enough red food coloring, since I didn't measure that. This was my first time making red velvet cake. The cake tasted fine - nothing great. It was kind of hard around the edges. Note the batter is quite thick, which took me a little by surprise, but is as expected according to my google search. The frosting too was fine - nothing great. It had kind of a gritty texture and wasn't as thick as I would have liked.

Simple Arrabbiata Sauce

I made this as written, and it was not to my liking. It was very acidic and bland. First thing, it needed sugar - something to tone down the acidic taste. I added about 1.5 tsp, and that was not enough. And it had no spiciness to it at all. I'm very confused by that given many of the reviews stated it was too spicy, and I'm kind of a spice weenie. I don't know if my red pepper flakes were too old or a bad brand or something. I don't know what else it would need to redeem it, but I would start with an entirely different recipe.

Tomato and Basil Pasta Sauce

I made this sauce mostly according to the directions. I did puree the onions and canned tomatoes (I don't care for chunky sauce). I substitued 1 cube of frozen chopped basil (from Trader Joe's) for the fresh basil. It was ok - fresher tasting than using canned tomato sauce. However, it was too sweet. My family commented it was too sweet also. I would cut the sugar in half, maybe less. If you want some zip to it, you might want to use more red pepper flakes, as I didn't taste any spiciness at all. I'm still looking for that perfect light tomato sauce.

Creamy Au Gratin Potatoes

As published, I did not really care for these potatoes. The only change I made was to mince the onions rather than slice them. I used medium cheddar. Short and sweet, the potatoes were bland. They need a lot more salt, less onion, more cheese and probably sharp cheddar for more flavor.

No Cook Icing

I was skeptical because it took so long of beating to get this to a somewhat thick consistency. I probably beat for 15 minutes. The frosting was still too thin for decorations, but ok for spreading on a cake. It was light and fluffy and tasted ok. I wouldn't make again.

Classic Peanut Butter Cookies

I'm not sure where the good ratings come from. Most reviews I read said to add flour and peanut butter. I started out with the recipe as written. On the first sheet out of the oven, it was apparent the cookies needed more flour - a lot more flour. I added flour with each sheet, as it needed a lot more. It also doesn't have much peanut butter flavor and needs more peanut butter. Rather than adjusting this recipe, I will start with a different recipe next time.

Overnight Caramel Pecan Rolls

These were ok. I followed the recipe exactly. I baked the rolls about 25 minutes and that was too long. They were overcooked and dry, so that is the first thing to watch for. I also didn't think there was enough caramel topping and that it wasn't thick enough. If I make these again, I'd probably double the topping and make it thicker with more brown sugar/butter ratio.

Slow-Cooker Chicken Tortilla Soup

Very good! Tastes like restaurant tortilla soup. I followed the recipe as is, except I put the raw chicken breasts in the crockpot and shredded the chicken later. I also omitted the tortilla strips on top. I wouldn't change a thing except I would prefer less corn in the soup.

Mint Chocolate Cake

I was eager to try this recipe based on its reviews and my love of mint chocolate. But I was disappointed in the result. I followed the recipe exactly with the exception of using semi-sweet chocolate chips instead of milk chocolate. I thought the whole thing had too much of a minty taste (I wonder if it would've been better to use mint extract instead of peppermint extract - not sure of the difference between the two). I thought the frosting was too dense and the chocolate topping too rich. It just didn't all go together. We found ourselves just eating the chocolate cake part and threw much of the cake away.

Sugar Cookie Icing

I used this recipe for the first time and was a little disappointed. I probably didn't make it thick enough, but I found it too runny and not fast-drying as a lot of reviews had said. I have always previously used basically the same recipe except with butter instead of corn syrup and thought I'd try this because of the reviews. The corn syrup does make it shinier, and I like that. The tastes are the same to me. I'll have to play around with the consistency.

Peanut Butter Cup Cookies

These little cookies are like a slice of heaven! I can't imagine improving on this recipe. I followed it exactly, but as others recommended chilled the peanut butter cups before putting in the cookies and then chilled the cookies in the pan immediately after adding the pb cups. And as another said, the trick to getting the cookie out of the muffin pan is to twist it - be sure the cookie is full enough to go over the top, so it can be twisted easily. I ended up with 34 cookies.

Easy Chicken Tetrazzini

This was a good recipe. I followed it with one exception - I used cream of celery instead or cream of chicken because it's all I had. I liked it quite a bit, though it was a little bland. One daughter was sold on it because it's spaghetti. The other daughter didn't go for it.

The Best Rolled Sugar Cookies

I like these cookies. I have made them several years for Christmas cut-outs and frosted/decorated. I haven't tried other recipes, so I can't compare them, but these taste good and I've gotten many compliments on them. I did follow some other's advice and added an extra 1/2 cup sugar this time and doubled the vanilla. If I have a small complaint about the taste, it's that they are a little dry. You do need to use lots of extra flour to roll them out and cut them.

Easy Peanut Blossoms

I love these cookies! This is essentially the same recipe as on the Hershey's website, except they say to insert the chocolate when the cookies are done - not to put back in oven afterwards. And that is how I made them. I think the chocolate would get way too soft/melty if you put back in oven. Using the recipe as is, I ended up with 35 cookies - of course, it depends on how big you make them - they look cuter smaller. I prefer these with the Hershey's kisses with almonds.

Quick Chicken And Wine

I was not happy with this recipe. I did dip in a little flour before the eggs as some suggested. Much of the crust still fell off. So it definitely looked bad. The taste was ok. My husband preferred it without the coating, I preferred it with. I won't make again.
