About this Cook
I'm a stay-at-home Mom to an adorable 4-month old and I love cooking daily for my family, and I always bake ! I'm known in our circle of friends for my desserts and baked goods. And I always bake from 'scratch', no short cuts !
My favorite things to cook
Cakes, cookies, candy, desserts Curries, casseroles, quiche
My favorite family cooking traditions
A pot of my Dad's soup on the stove always makes me warm inside. My Mom is a great cook too and she's always taught me what she knows.
My cooking triumphs
My cakes and desserts are always well received and word is spreading amongst friends that if we have a gathering, I must bring the treats !
My cooking tragedies
A seafood pie that was more like seafood soup ! My husbands birthday cupcakes were more like rock buns !

Too Much Chocolate Cake
I made this yesterday, but I decided not to put in the chips and I used a 'mousse' instant pudding. It was absolutely delicious, moist and very chocolaty. I put melted Cadbury's chocolate for the frosting, and it was heaven. A GREAT recipe I will make again and again !

I made these today because I was given 2 huge boxes of dates, which I love. I found the recipe easy and straight forward, the mixture comes together nicely and cuts easily after refrigeration. They are very peanut buttery but very tasty. I only had sweetened coconut so I think on a second attempt, I will use slightly less peanut butter, and unsweetened coconut. Good though, good !

Mini Orange Mince Pies
These went down a treat at Christmas! The pastry with the orange zest is outstanding & buttery! Will make again next year.
