I made a 7-lb turkey breast. I was a bit apprehensive about brining my turkey, as I never did it before and worried that it might make my turkey salty, but no worries here. The turkey was excellent - very moist and tender! I did reduce the ingredients by half, used 3/4 cup of kosher salt, used olive oil rather than butter, and cooked it entirely with the breast side up. I also inserted a pop-up thermometer, which you can purchase at your local grocery store, and it turned out excellent. Will definitely continue making my turkey this way. Thanks for the recipe!
