Funnel Cakes

I wanted to see what this cake tasted like exactly, so I followed the recipe exactly. While it's not the funnel cake from a carnival, it's still very good. I will follow the recipe when I make it again, as I didn't think it needed improvement. If I do want a change, I'll try someone else's recipe first. That said, It's important to have the oil at the right temperature in order for the cakes to come out correctly. Just cooking them a little longer or a little shorter doesn't work with funnel cake. 360 to 375 is perfect. Cook approximately 1 minute per side or crispier go 1 1/2 min per side. A must (for me, anyway) is the funnel cake pitcher. See photo. It makes it so much easier.

Apple Butter Pumpkin Pie

I followed the recipe exactly. I expected to taste apple and pumpkin. We all thought (6 of us) that it tasted like a bland pumpkin pie. I made this because of all the positive reviews. I don't get it. And the streusel topping adds nothing, better off without it. Two out of six said they'd eat it again but I won't make this a second time. I wonder if it's because I used Smucker's Apple Butter although no brand was specified in the recipe.

Crispy Potato Pancakes

5 Stars because it's the basic potato pancake, no frills, just good flavor. I used yellow potatoes the first time (make sure to drain all the water out). The next time, I cheated with store-bought shredded potatoes (Simply Potatoes) and it was just as good. There are so many ways to dress these up if I want to also. I made them the center attraction after St Pat's day, adding leftover corned beef and a dash of horseradish. Great little recipe. Adjust garlic and onion to your liking.
