Here are the changes on made based on what I had on hand. First I used yellow Spanish rice which really gave it great flavor. I didn't have cream of mushroom so I substituted with 1 cup of sour cream, I added a can of drained rotel and only used 3/4 cup salsa. I also sauteed my chicken with the onion and salt & pepper. I also added a can of sweet corn which I really loved, it was a nice contrast with the spicy flavors and added some texture. I didn't layer for time sake but combined everything together including 1/2 cup of cheese and them topped with remaining cheese (I also used pepper jack cheese on half for me and my hubby, would have been too spicy for the kids) cover with foil and cooked 30 min, uncovered and cooked an additional 10 minutes. Very good will make again and will freeze half to have a quick meal on hand at a later date.
