Veronica's Apple Pancakes

My family loved this! I doubled the recipe (but forgot to double the sugar!) and made half the flour whole wheat. I wasn't paying attention when I was shedding the apples with my Cuisinart, and ended up with twice as many apples, so I blended them with a little water and a generous Tablespoon or so of unsulphured molasses to make a "syrup". My two year old just kept eating them. Oh, and doubled the cinnamon! Could still have probably put some in the syrup, too...

Pumpkin Chocolate Chip Cookies III

I reduced the sugar slightly and added a tsp of molasses. They were big, fluffy and cake like, everyone enjoyed. Well make again.

Pumpkin, Spinach, and Feta Frittata

WONDERFUL! I sauteed the onion in olive oil and put it on the bottom of the casserole dish, and then piled the butternut squash (instead of pumpkin) and potato on top, then feta, wilted fresh spinach, poured on the eggs and topped with the cheddar. Everyone at the table loved it and had seconds, except for the toddler who could not be diverted from the Turkish red lentil and mint soup I had also made.

Turkish Red Lentil Soup with Mint

We really enjoyed this one. I had no wheat, so I used double the rice (used brown), and cut the cayenne to a pinch. My toddler ate three bowls!

Baked Spaghetti I

It was delightful comfort food, my whole family (including the two year old) had seconds, which is unheard of. The only changes were that I did not have any bell peppers on hand, so I left that out, I only had fresh mushrooms, and I used a can of Progresso non-condensed cream of mushroom soup, so I skipped the water. Oh, and I used those secret veggie noodles that had corn and squash in them for a vitamin boost. Will make again soon! Update: I have since made this with sometimes extra noodles, half the meat, twice the mushrooms, with peppers, without peppers, extra cheese, sharp cheddar, mixed cheese, but the basic noodles, tomatoes, and soup base just lends itself to super versatility! I often make the meat portion ahead and freeze it, and I can make this dish super fast with little mess, and everyone loves it!

Middle Eastern Rice with Black Beans and Chickpeas

Exchanged smoked paprika for cayenne. Only added one can of garbanzo beans. Handful of cilantro and a little less parsley. Perfect for packed lunch and improves as leftovers! I made it without meat. I also made a version with brown rice I had soaked overnight, and that worked well, also.

Butch's Strawberry Avocado Salsa

Substituted yellow bell pepper for jalapeno. It was lovely, transformed some rather fishy baked perch fillets into a lovely and colorful meal. will be making it again!

Mushroom Curry with Galangal

I needed a vegetarian version, so I substituted 1T Miso for the fish sauce and added cubed ex firm tofu. I swear the sauce is so good I caught my picky 12 year old trying to lick the pot!

Almond Biscotti

After reading the previous reviews, I followed the recipe very closely. I used my food processor to make the dough/batter and I forgot the milk wash and extra sugar. They were wonderful! This is my new goto biscotti recipe, even my 11 yo daughter likes them.
