Chocolate Peanut Butter Bars IV

Really easy and quite rich and delicious. 2.5 cups of graham crackers = 15 whole graham crackers. I added a scoop of peanut butter to the melted chocolate before I spread it on top, to soften it up a bit, and it cut nicely. These are even better the next day once they have sat in the refrigerator overnight.

Fresh Pear Pie

I liked this recipe quite a bit. It was easier to make than I thought. I used 3 large pears and 1 apple, it turned out very nice indeed. I used 1/2 white sugar and 1/2 brown sugar.

The Best Lemon Bars

These bars were a hit with me & my family at Easter. They were easier to make then I thought - I made them in two steps: I made the crust in the morning and I made the filling later in the afternoon. This allowed the crust to cool completely. I used a bit more fresh lemon juice, so I used a pinch more flour. I sifted some powdered sugar on top, delicious.

Slow Cooked Apple Brown Betty

I have been wanting to try this easy recipe for a while, and had the chance today. I used sprouted wheat bread and 3 different kinds of apples. I also threw in a handful of granola that I had, along with about 2 tablespoons of water. It was really good, I love the way it smells.

Salt and Garlic Bagel Chips

These were pretty good little snacks - they were eaten quickly. I used a combo of olive oil and butter, and used sea salt instead of regular salt. I also cooked them longer to make them crunchier. Overall - very good!

Blackberry Pie III

This was the first real (not from a box mix) pie that I have ever made. I got the kids to pick some wild blackberries. Making the pie was so easy - I did add one extra tablespoon of flour as the blackberries were so juicy. It came out SO GOOD! I will make it again, for sure.

Easy Mashed Potato and Roasted Vegetable Enchiladas

This recipe came out really good. I used "real" mashed potatoes, only because I like them kinda lumpy. I served it to my guests with some spanish rice and red wine. What a hit!
