Quick and Easy Chicken and Tomato Pasta

Tasty, hearty, and easy! I made a vegan version with seitan instead of chicken. Could barely tell the difference. I also added a splash of wine and some more tomatoes as per others' suggestions.

Grilled Chicken with Herbs

Wonderful marinade! I did cut back on the balsamic vinegar a bit, though. I made a vegan version of this, using seitan. It came out delicious on the grill, juicy and just crispy enough.

Restaurant Style Chicken Nachos

This was a delicious confort food dish. I made a vegan version using Weststoy cubed seitan. Aside from that, I followed the recipe as is, except I added a bit of "Mexican spices" seasoning.

Chicken Salad Panini

This is a great panini sandwich recipe! I made a vegan, slightly healther version: I used Westoy's "chicken style" seitan (http://www.westsoytofu.com/products/detail.html/seitan/chicken-style-seitan), Vegenaise egg-free mayo, and Daiya vegan cheddar cheese. I also spread olive oil on the outsides of the bread.

Norwegian Waffles

This tasted great. We made a vegan version using egg replacer and almond milk. We added about a 1/4 cup of whole wheat flour to bulk it up a bit for our Belgian waffle iron, and to add a little whole grain. We had some problems with the batter sticking to the waffle iron (not sure why; we've been making vegan waffles for over a year with this waffle iron; I have no idea why this batter would be any more sticky than the rest...) We added some walnuts toward the end for the last couple waffles. Served the waffles with maple syrup and blueberries. Delicious!

My wife and I enjoyed this salad variation. I made a vegan version using Daiya mozzarella I put a little bit of fresh basil on top, only because I had some I had to use up. All in all, a nice combination!

Chicago-Style Hot Dog

Since my wife and I are vegan, I made a vegan version of this. I didn't try to be exact, but as close as possible while staying within my ethical and (wimpy) hotness tolerance bounds. The only veggie hot dog I like a lot is Loma Linda, but theiy're not in my close-by grocerices, so I used Field Roast Italian sausage (very good), which I grilled. I used an Anaheim pepper, that's about as hot as I can take. Aside from that, I followed the recipe exactly. I thought it was great; my wife loved it, too. With some cole slaw, corn, and baked beans on the side, this was a wonderful pre-Memorial day barbecue feast.

Very tasty, quick to make, and satisfying. I made a vegan version using seitan (I used WestSoy seitan strips). I also used agave nectar in place of honey, and corn rather than flour tortillas (that's what I had around).

Chicken Gravy Enchilada Casserole

My wife and I liked this a lot. I made a few touch-ups: - I veganized the recipe by using seitan instead of chicken. I lightly browned the seitan in a couple tablespoons of canola oil. Seitan is a high-protein veggie meat made primarily from wheat gluten; it's available in Whole Foods-type stores and sometimes "regular" grocery stores. In recipes, it has a taste and texture similar to chicken. There are lots of recipes for it online, but I always buy it ready-made from a package. I also used Follow Your Heart vegan cheddar (though my first choice, had I not had leftovers to use up, would have been Daiya vegan cheddar). - Mindful of other reviewers' comments, I added some garlic powder to the mixture as well as some corn starch for thickening. I served it kind of half over, half next to rice, for which I added a bit of Mexcan spices to the broth. I lightly spooned salsa verde on top of the dish.

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing

This was absolutely delicious! My wife and I could hardly get enough of it! I veganized the recipe by using seitan (made from wheat gluten and which you can buy at many grocery stores, usually near the tofu) instead of chicken, egg-free Veganaise (amazing), and almond milk instead of cow's milk.

Almond Mandarin Salad

Very tasty! The bacon and almond adds bulk, and the dressing is a great combo of flavors. I made a vegan version with SmartLife veggie bacon, and I substituted agave nectar for honey.

Italian Chicken and Chickpeas

Mmm - this was tasty! My wife and I both loved it. I made a veganized version of the dish, using two packages of WestSoy seitan. Seitan is a wheat gluten-based veggie meat that has a taste and texture very similar to chickn in recipes. The only difference in preparation was that I didn't have to cook the seitan as long once I returned it to the pan, since there was no concern f undercooked meat.
