Ham and Asparagus Strata

Great idea...though I had to use what I had on hand, which meant a couple substitutions:2c. shredded jalopeno pita plus 1 box cornbread stuffing, sharp cheddar instead of swiss, cheddar cheese soup instead of cream of asparagus. Left out the mustard cuz the bf can't stand it. Was a hit!

Slow-Cooked Pulled Pork Shoulder

You should have seen the kids' faces when I told them we were having pulled pork with slop sauce for dinner. Slop sauce, what's that?! It has become a family favorite. This is really easy and comes out great. I make this every time pork roast goes on sale. I use apple cider vinegar and add a little more brown sugar and some cayenne pepper. Being from the South, I like the sweet heat!

Tim's Green Bean Casserole Extraordinaire

I made this for my first Thanksgiving with my BF (three years ago). His cousin showed up and ate it all. I made another one the next day for the big family dinner. The same cousin met me at the car and took the casserole home! Everyone thought I showed up empty-handed! The last two years I made it with fresh green beans from my garden. YUM!

Steak House Au Gratin Potatoes

Made this for Easter lunch, and followed the directions exactly except for the cheese...I used a mix of extra sharp cheddar and colby jack. It was a huge hit, even with my 93 year old great grandma!

Best Brownies

I followed the advice of previous cooks and used a wisk rather than a mixer. Added some butterscotch chips to both the brownies and frosting, which turned out almost like a fudgey glaze. Mmmmm craving satisfied.

Lemonade Icebox Pie

This is a very easy make-ahead dessert that's great for summer. And bonus...it doesn't heat up the kitchen! Put some grated lemon and fresh blackberries on top and it's pretty enough for company! Also, for a breast cancer survivor I tried pink lemonade and strawberries...yum!

Broccoli Salad III

This is almost identical to a very popular broccoli salad I use to make for a restaurant I worked at. I was craving it and found this recipe, which is super close! I like to use apple cider vinegar and omit the bacon as it gets mushy and chewy.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Yep. Perfect all right. I can cook almost anything but I'd always had trouble boiling eggs. We really like them so I made 18 and increased the boil time to 20 min then let them sit in the hot water for another 5 (don't know if this made a differenceI just got busy with something else).

Homesteader Cornbread

Every fall, my Memom sends me a big box of local South Georgia cornmeal to use for my dressing recipes. I always have a lot left over and need to use it up, so I make cornbread. I've made this with and without the corn (my crew really doesn't do corn) and it's great either way. I've also used this recipe as a base for my cornbread dressing (leave out the sugar) and it's great.

Jambalaya

I make this all the time. The family LOVES it. I do add shrimp, but only because the kids get very upset if I don't. It really is perfect without it. I use rotisserie chicken in place of the chicken breast because it's easier on weeknights. Also, for special occasions I substitute alligator sausage for the andouille. YUM!

I have made these using various flavor combinations:red velvet with cream cheese and white chocolate, german chocolate, and chocolate peanut butter. They are always a huge hit, they make portion control for kids easy.

Cranberry Apple Sauce

Substituted orange juice because it's all I had. I did add sugar, but it would have been ok without it. This was so easy I'll never buy cranberry sauce again!

Cool Cucumber Salad

I used what I had on hand...fresh garden cucumbers and plain greek yogurt. Also subbed celery salt for kosher. Goes great with rice and hummus for a refreshing vegetarian greek meal

I went a little cajun and substituted alligator sausage and stuffed my Thanksgiving duck with this. It was divine! Had people showing up the next year wanting to know where the alligator duck was!

Monterey Chicken

I was a little skeptical...teryiaki sauce and cheese? All I had was some leftover homemade maple teryiaki, which was really sweet. I added some celery salt and hot peppers and it came out amazing!
