Quiche

Reviewed: Apr. 5, 2011
This was my first quiche, so I followed the recipe exactly. It came out perfect! Next time I'll use a homemade crust, bigger pan, and add broccoli! Note: This will spill over and burn onto your brand new oven, and smoke up the house, and have your significant other really worried when he comes home to a house full of smoke. Put them on a sheet pan, not directly on the oven rack!

Slow-Cooked Pulled Pork Shoulder

Reviewed: Apr. 22, 2012
You should have seen the kids' faces when I told them we were having pulled pork with slop sauce for dinner. Slop sauce, what's that?! It has become a family favorite. This is really easy and comes out great. I make this every time pork roast goes on sale. I use apple cider vinegar and add a little more brown sugar and some cayenne pepper. Being from the South, I like the sweet heat!

Ham and Asparagus Strata

Reviewed: Apr. 4, 2011
Great idea...though I had to use what I had on hand, which meant a couple substitutions:2c. shredded jalopeno pita plus 1 box cornbread stuffing, sharp cheddar instead of swiss, cheddar cheese soup instead of cream of asparagus. Left out the mustard cuz the bf can't stand it. Was a hit!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Reviewed: Oct. 12, 2011
Yep. Perfect all right. I can cook almost anything but I'd always had trouble boiling eggs. We really like them so I made 18 and increased the boil time to 20 min then let them sit in the hot water for another 5 (don't know if this made a differenceI just got busy with something else).

Spinach Stuffed Chicken Breasts

Reviewed: Sep. 14, 2011
Really good but needed only 45-50 min cook time. I used really big chicken breasts and they were still a little dry. Skipped the bacon to save calores and it still had more than enough flavor.

Lazy Baked Macaroni and Cheese

Reviewed: Jun. 5, 2011
Good idea. Points for easy...but needs a couple changes. 1. Grease your pan! 2. After you coat the noodles with butter, stir everything else up together (including the noodles and cheese). Pour it all in the baking dish at the same time 3. Bake for an hour, stirring once halfway through.

Best Brownies

Reviewed: Nov. 12, 2013
I followed the advice of previous cooks and used a wisk rather than a mixer. Added some butterscotch chips to both the brownies and frosting, which turned out almost like a fudgey glaze. Mmmmm craving satisfied.

Chicken Enchilada Soup III

Reviewed: Oct. 19, 2013
Substituted extra fine ground corn meal for the masa harina and doubled the recipe. It was great on our first cold day this fall...and definitely made it into rotation!

Cream Cheese Corn

Follow the directions.DO NOT use a crockpot, even on low. It's great if you do it the right way! Add a little sugar if you like it the southern way!

Broccoli Salad III

Reviewed: May 17, 2013
This is almost identical to a very popular broccoli salad I use to make for a restaurant I worked at. I was craving it and found this recipe, which is super close! I like to use apple cider vinegar and omit the bacon as it gets mushy and chewy.

Cake Balls

I have made these using various flavor combinations:red velvet with cream cheese and white chocolate, german chocolate, and chocolate peanut butter. They are always a huge hit, they make portion control for kids easy.

This is a great basic recipe for southern sausage gravy. I make it all the time. I usually use deer sausage but it's great either way!

This is a super easy way to dress up brownies. I made them for surprise company and served them warm. They were gone before they had a chance to cool!

Monterey Chicken

Reviewed: Dec. 21, 2013
I was a little skeptical...teryiaki sauce and cheese? All I had was some leftover homemade maple teryiaki, which was really sweet. I added some celery salt and hot peppers and it came out amazing!
