Creamy Kale Salad

Caprese Chicken

YUUMMMMMEEEEEE! I followed it exactly as written with one minor substitution. The taste and texture is wonderful, never picked up a knife because they were still tender. I did use thinner breasts, not too thick. I didn't have fresh basil so I used about a 1/2 inch squeeze of basil puree from a bottle. (usually right next to the fresh herbs in the supermarket) I spread it on the breasts right before adding the mozzarella and tomatoes. Make sure you use FRESH mozzarella people! MY 14 y.o. daughter, who doesn't like fresh tomatoes, gobbled it up and asked if there was anymore! The rest of the crowd said, "make more next time!" And it LOOKS so gourmet too. This is a keeper!

Holiday Chicken Salad

Yumm-o! Do as the others suggest and add the garlic powder, apple, red onion & grapes. Didn't need the poultry seasoning as one suggested because the seasoned salt is enough. My family thinks it's good enough to be from a restaurant.

Zucchini Pasta Bake

YUMMY. Definitely add the canned diced tomatoes and double the spices like other reviewers suggested. I left out the celery flakes and don't think it was missing anything. I even used whole wheat rotini and the kids ate it!

Grilled Fish Tacos with Chipotle-Lime Dressing

These are pretty darn good with a few minor adjustments... like another reviewer noted ~ the dressing needs a few tsp. of honey or light brown sugar to take it from just okay to restaurant quality. And definitely marinate the fish at least 24 hours.

New Wife Tuna Salad

This is super tuna salad. I used (3) 6.4 oz pouches of tuna in water instead of canned and 3 claussen dill pickles instead of the relish. I also added another stalk of celery. The whole family enjoyed it in pita pockets with romaine lettuce. This is how I make "tuna" from now on!
