Baked Falafel

Flavor was great but they were a bit wet inside (even with a very good crunch on the outside). Not sure how to make them a bit more solid inside.

Basil Chicken over Angel Hair

With a number of changes I like this, but as is it is only okay. I do not like onion in this dish, so left it out after the first run. I add andouille for a kick of flavor and fat (which I am a fan of--for flavor AND nutrition!) And I (as always) pounded and well seasoned the chicken before cooking it.

Chocolate Sheet Cake III

I loved this cake--moist, tasty. I don't like using sweetened condensed milk, so might have to figure out a replacement next time. I lessened the brown sugar (I always lessen the sweetener in sweets). I am a spice cake fiend--just about everything I bake has one or more spices, so I loved the addition of cinnamon (which also helps regulate blood sugar so is good with sweets!) but my chocolate-loving father said "that's not chocolate cake, that's a spice cake"--so be forewarned this is not a decadently rich chocolatey cake. I love it, though!

Cannellini Bean with Flat Leaf Kale

This is pretty good--good enough to make again, but not for company or any special occasions. I used homemade chicken broth instead of water--for nutrition and flavor, and used andouille as it is what I can get easily. I must say this is the most I have enjoyed kale ever!

Simple Turkey Chili

Followed the recipe exactly except I had late guests coming in so it simmered on very low for over an hour--I tasted it at the 30 minute mark and it was so so, but after 75 minites or so on low it was SO GOOD! Topped it with cheddar and scallions. Oh, and I used half white and half dark turkey.

Easy Masoor Daal

Added some diced carrot but otherwise followed precisely. This was very tasty and very easy. I served it over basmati rice and topped with some yogurt (next time I'll make up some raita).

Turkey and Yam Spicy Tacos

We eat Ayurvedically (seasonally) and have moved from ground beef to turkey with the beginning of spring. Problem is: my husband does not like ground turkey. We ALL loved this recipe, including my 4 year old son! I did not use creole seasoning, made my own chili powder, I topped the tacos with a tiny bit of cheddar, guacamole, and a drizzle of yogurt. I served them on warm (soft) corn tortillas. So good!
