Chocolate Cheesecake

First things first, I don't own a springform pan so I had to slum it a little bit, and divide my batter up between regular cake pans. As a result, this review might be a bit biased regarding the mechanics, so I'll skip right to taste. This cake seemed more crumbly that creamy, and tasted like it really wanted to be fudge rather than a cheesecake. The graham cracker crust also seemed to become saturated with the cake batter to the point where it became indistinguishable from the mix itself. You could still taste it, but it was chocolate-colored and not crispy at all. Just chocolate flavored graham mush. Based on all these rave reviews I was really expecting better. It was till tasty, just not what I was hoping for.

Cornbread Muffins II

These muffins barely rose AT ALL. They weren't overly dense, which was a bonus, but they were fairly bland. I was really looking for that nice crispy cornbread muffin top, but got a sad little round puck. I don't like sweeter cornbreads, so the flavor did not put me off, but this is just something to take into account when making this recipe. Either way, I expected something MUCH better for how highly rated this recipe was.

Creole Cornbread Stuffing

This could have been a 5-star recipe for me if it wasn't so incredibly spicy! Don't get me wrong - I like flavor as much as the next gal, but after looking at the recipe I cut the Tabasco and cayenne by half and it was STILL too hot for my family. This recipe also makes a LOT of stuffing! I had a fair amount of difficulty stirring it all up in even my biggest fry pan. You might wanna go for a big soup pot instead. Anyway, I wound up stirring/storing it in an 8x13 baking dish, and it filled that to the brim. I'm definitely making this recipe again - it WAS delicious, I'm just going to modify the spices a bit, and maybe cut the recipe by half.

Best Green Bean Casserole

Totally delicious, and super easy to prepare. I went a little heavy on the cheese and stirred in some of the french fried onions because that's how I roll, but this is a classic recipe that is great even as leftovers!

Banana Bread IV

Delish! I made it exactly the way the recipe said. The only drawbacks were that I had to cook the loaves for nearly another half hour than what the recipe stated, and upon cooling the center of the cake caved in a bit. Heck, I didn't care. The crust was so crispy and delicious and the cake is moist and soft. So easy, too!

Buffalo Chicken Wing Sauce

This sauce was delish and flavorful! I omitted the Cayenne because I am a sissy, and I also added a little corn starch slurry to thicken the sauce up a bit, but my wings were a success.

Creamy Vanilla Ice Cream

This was very tasty and rich! The only thing I changed about the recipe was adding a real vanilla bean (split and scraped) to the mix instead of vanilla extract. This was my inaugural attempt at making homemade ice cream and went along a lot smoother than I had planned. The only caveat was that after freezing the batch overnight it set up pretty hard, not nice and "scoopable" like it was when I checked on it after about an hour or two in the freezer. After a bit of research it seems to be the nature of the beast... it's just best when it's fresher. (of course, I'll welcome any tips to the contrary!) I think next time I'll try this recipe one step down the milk ladder and try half & half and whole milk to make it a little less fatty, because sometimes the film heavy whipping cream leaves on the inside of my mouth feels icky.
