Sugar Cookie Frosting

I used this recipe to coat my easter shortbread cookies. I don't keep shortening in the house so I used butter instead- it tasted phenomenal! I think this is my new go-to frosting recipe! So light and creamy!

Asian Grilled Chicken

Great recipe. Could not find Thai sweet chilli sauce anywhere, so just used chilli sauce instead, and only marinated for 2 hours. My husband loves spicy food so this was a winner! I served with vegetable fried rice.

Ultra Creamy Mashed Potatoes

Mine came out a little too mushy due to a slip of the hand when pouring the broth back into the potatoes, but they tasted phenomenal! I used the sour cream option for fewer calories- my sour-cream hating fiance couldn't taste it at all! Will make sure not to add so much broth back in next time!

Black Bean and Corn Quesadillas

After a weekend of BBQs, my fiance and I needed a break from meat- this was perfect! I followed the recipe exactly, apart from the way I cooked them. I placed the filling on one half of the tortillas, and folded them in half, then grilled them in the George Foreman for about 5 minutes- they were browned perfectly, a lot less messy and no need to cook them in fat either.

Bacon Roasted Chicken

This was good and my fiance and I liked it a lot- the meat was moist and juicy, but I was disappointed as the skin didn't crisp up like I like it to- it was moist and chewy. Next time I will try to leave it in the oven for longer to crisp up the skin, then it would be 5 stars for us.

Cousin Cosmo's Greek Chicken

This was a really great meal! I used a teaspoon of dried chicken stock instead of the bouillon cube and omitted the flour- it didn't need it. I used a whole tomato and a whole bag of spinach for the 2 of us too, and served over garlic and olive oil couscous. It was very different from what I usually cook, so a nice addition to my recipe box

Mexican Lasagna

My fiance is still raving about this! I used Morning Star grounds instead of ground beef (with 1/4 cup water to add some moisture), and added a small can of corn, half a red bell pepper and half an onion, just to add more vegetables, but it would have still been great without those. This is definitely in my keeper list!

Slow Cooker Pulled Pork

I just made this, was not keen on the taste before I added the BBQ sauce, it was a bit sweet and weird but then I'm not a fan of root beer, will try cola or Dr Pepper next time I think. After I added the BBQ sauce it tasted a lot better.

Aloha Chicken Burgers

Made these last night with my fiance- they are AMAZING! We only had small hamburger buns, so I cut the chicken breasts in 2 so we had 2 little burgers each, and swapped the bacon for turkey bacon, but they were the only deviations. I left the chicken in the soy sauce a bit longer; an hour and a half whilst I went grocery shopping, and the chicken was so tender and yummy straight off the grill! I thought the pineapple might over-power the taste and make it too sweet, but the flavors complemented each other perfectly. I will definitely be making this again!
