Barbecued Beef

Reviewed: Dec. 30, 2004
This was very easy and the taste was very good. The meat was tougher than I anticipated, but that could have been the cut of meat. I will make again.

Three Cheese Manicotti

A great dish! My hubby died and went to heaven for it. It's rich and yummy and restaurant-like.

Oatmeal Toffee Cookies

Reviewed: Dec. 30, 2004
These are delicious. I also couldn't find the toffee baking bits so I used about five skor bars and crushed them up (should have used my food processor for that!). Has a nice crispy bottom and a good flavor.

Hello Dollies II

Reviewed: Dec. 30, 2004
These were good and even better when you know how easy they are to make. Hubby loved them. I also used graham cracker crumbs and a little more coconut, althought that bring it very close to the hello dollies 1 recipe here. I will make again.

Easy Quiche

Reviewed: Dec. 30, 2004
This is terrific! First time making quiche and I was not dissappointed. In fact, I made it for Christmas morning brunch and was hoping it would turn out. I am so glad it did. Next time I will try sausage and spinach. It seems very versatile. And it baked up beautifully. It will definitley be added to my repertoire! Oh, I used 1/2 cup less of milk, and added an egg.

Christmas Eve Beef Stew

Reviewed: Dec. 30, 2004
This was just okay- not great but not bad. The only thing I changed was that I doubled the spices and added some crushed bay leaves, and it still was too bland for my taste. The meat tasted the best after cooking for so long. I might try again with more spices, or even adding an onion soup packet instead of the onions to liven it up a little.

Orange Cake

Reviewed: Sep. 11, 2004
This was a very good cake. I gave it four stars because the glaze was very runny and I ended up using a glaze that called for powdered sugar instead. Overall it has a great flavor, but be sure not to overcook it. It really comes out of the bundt pan nicely.

Lemon Mushroom Herb Chicken

Reviewed: Mar. 12, 2004
This recipe sounded really good, but it was just okay. My husband liked it more than I did, but I wasn't quite sold on the mixture of flavors... strong lemon flavor and strong herb flavor. Probably won't make it again, but it was worth a try.

Tofu Hummus

Reviewed: Jun. 15, 2003
I am sorry, this was terrible! I am a big hummus fan, but this was not what I expected. It was spicy (too much lemon juice), and needed something else (maybe salt). I am giving it two stars because the texture was nice (thanks to the silken tofu). I will use tofu in all of my hummus recipes now.

Brie Cheese Appetizer

Reviewed: Jun. 15, 2003
I have had this recipe for awhile and was very dissappointed in it. It might be my fault- I took the suggestion of other reviews and used crescent dough and made individual appetizers. That is all I changed but it still didn't turn out as I expected. It was salty and more bitter than I wanted. I think mine needed more preserves. However, it gave me other ideas. Rolling the crescent dough with just the preserves (of any flavor) would be great I think. All in all, it needs some changes but was a good idea.

Best Spinach Dip Ever

Reviewed: Apr. 30, 2003
I printed this recipe ages ago, but never had the need for the dip until recently. BOY am I glad I made it! I have now taken it to two parties and have been asked for the recipe by so many people. They are surprised at how easy it is. The leek soup mix is the key ingredient, and tastes so much better than the vegetable (IMHO). I used a full 10 oz. package of spinach (it needs it for texture), and I doubled the recipe. It works best if you squeeze as much liquid out of the spinach as you can. If not it could turn out too runny. Overall, it's quick, easy, delicious, and will become a staple in my entertaining!

Easy Peach Crisp I

Reviewed: Apr. 13, 2003
The taste of this recipe was fabulous!! I forgot to consider the other reviewer's suggestions, and after reading them, I absolutely would have cut the sugar in half. I liked it but it would be just as good (if not better) without as much sugar. I did have to bake it for about 15-20 minutes longer than suggested, to make it brown and to let the juices soak into the cake mixture. Make sure you poke lots of wholes in the top as well. Also, I thought there was a little too much liquid, but after letting it sit, the juices thickened to an acceptable consistency. Overall a definite keeper, and suitable for company (a real compliment!).

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Mar. 8, 2003
After reading all of the fabulous reviews this recipe received, I hate to give it such a low review. I just didn't like this cookie for several reasons: they were too sweet with too many chocolate chips, they were so hard from the start that it hurt my teeth to chew on them, the taste wasn't very good and I have had sooo much better, and the color wasn't the golden I am used to with chocolate chip cookie- it was more of grayish color (not great for company). They also took forever to bake, when I am used to just whipping them out. I think taking a normal cookie recipe (like Toll House, etc.) and increasing the brown sugar and vanilla would be better. There are so many other great recipes out there that I won't make this again, but at least it was worth the try.

Wanda's Chicken Noodle Bake

Reviewed: Feb. 12, 2003
This dish was pretty good, but it was missing something. I might make it again, but try some spices, (maybe garlic?), or something to make it less bland. I would also suggest using fresh vegetables, as that might make a difference. It took some time preparing, but it made enough to last three nights for us! It's very kid friendly, which is good. Overall it is good, but will take some experimenting to get it to just the right recipe for me!

Baked Oatmeal I

Reviewed: Jan. 12, 2003
This was very good, but I gave it four stars because I thought it could use some improvements: first I would add some brown sugar to the oatmeal mixture as well as on top, and maybe reduce the white sugar; and I baked mine for 35 minutes, but it only really needed 30, maybe less; I would also put cinnamon in the oatmeal mixture as well, and possibly try other spices. Overall it was really good, and I will definitely make again.

Italian Wedding Soup I

Reviewed: Jan. 8, 2003
This was excellent! I just finished this for dinner and I am very satisfied. Besides the wonderful flavors mixed in the soup, I like the fact that it has your veggies, meat, and carbs all in one dish! As per another reviewer, I also baked the meatballs at 350 for 25 min., and they came out fine, except I would say to lightly grease the pan you use, as they tend to stick. You could also get away with baking them a minute or two shorter. I didn't add these to the soup while cooking, only when served. THanks for the great recipe! Oh, and I also used spinach, orzo (half of what's called for), and added garlic powder to the meatballs.

Peanut Butter Noodles

Reviewed: Jan. 8, 2003
This was a big winner with the whole family! My son liked it and my husband thought they were great. I, too, enjoyed the taste, which WAS different and a nice change from the usual...actually, it will probably be added to the menu of "usuals" for us! Thanks Amy! Oh, and I added chopped uncooked broccoli and really liked that. I'm sure there's lots of variations possible for this great basic sauce.

Butternut Squash Soup

Reviewed: Jan. 4, 2003
I was so dissapointed in the final result of this soup because it really was like baby food in consistency- so much so that we had to throw it out. And I also cut down on the cream cheese. Before I added the cream cheese and pureed it, I kept tasting the broth and thought it was very good, so I anticipated a great soup. Then it was a huge pain to puree in batches, and we couldn't even eat the final soup! I might attempt this again, but will not puree. Also, what made it much easier was buying the pre-packaged cut p butternut squash our supermarket sells. You just throw it in- no cutting involved. Anyhow, the broth tastes good, so it is a good base.
