Roasted Brussels Sprouts

This was amazingly delicious and so simple. My family was fighting over who could have the last spoonful. I am definitely incorporating this into our regular dinner menus! I only regret I've gone so long before discovering this easy, yummy recipe.

Chicken Suiza Cornbread Bake

This was a huge hit at my house. Even my picky 2-year-old had a plateful. I followed the recipe almost exactly, except I substituted 2 eggs instead of the egg substitute, and I added an extra scoop of chile peppers for a little extra zest. The cornbread crust is incredibly sweet and delicious. I wish it didn't dirty so many dishes in the prep, but that's just my laziness talking. :) All in all it was very yummy and relatively simple, and I am going to incorporate this into our regular recipe rotation!

Barbie's Tuna Salad

I don't understand how this recipe works for some people. I used a standard can of tuna which was 5 oz (recipe calls for 7 oz can, but our cans aren't that size) and only 4 T mayo. It reached a soup-like consistency (and yes, I drained the tuna) to the point where I had to add another 5 oz can of tuna just to thicken it up to a normal texture, and it was still too runny for my taste. The parmesan was overwhelming. I did like the curry/dill combination and plan to use that in my tuna in the future, but otherwise this recipe wasn't so great for me.

Shepherd's Pie VI

This was amazing! I followed other users' advice and replaced the broth with gravy, and I added peas (I love peas) on top of the carrots. It was phenomenal. The prep was a little labor-intensive and left my kitchen a little bit of a wreck, but the end result was totally worth it. I am definitely making this again!

Sausage Soup

This was unbelievably good! I had to leave out the pasta because my diet won't allow it, so I added a couple extra cans of Italian diced tomatoes and a can of green beans. I used a pack of pre-cooked zesty Italian sausage which saved time and tasted awesome. We served it with a generous dollop of parmesan cheese and it was so amazing! I printed this out and put it in the very front of my cookbook's soup section. I can't wait to make it for family and friends.

Rosemary Chicken with Orange-Maple Glaze

Loved it! Very simple two-pan dish. It wasn't a very thick glaze, but the flavor was perfect the way it was. If it were a thicker glaze I'm afraid it would be overpowering and cloying. I made it exactly as written and our dinner guests were very impressed. Even my picky 2-year-old ate an entire adult-sized portion, which says A LOT! This is going to the front of my cookbook binder.

Fluffy French Toast

This is my go-to French toast recipe now! So easy and so delicious. My picky toddler *devoured* this. I found the batter makes fewer than 12 slices - maybe it's the bread we're using - but that's fine with me. I will be making this again and again.

Soft Oatmeal Cookies

So easy and delicious. I had all the ingredients on hand (that never happens for me). My 3-year-old loved helping -- her favorite part was rolling them into balls. We didn't flatten them and they took a little longer to bake (about 14 minutes), but they came out delicious. We also added raisins.

Yellow Squash Casserole

I am in love with this recipe. I saute the onion with a clove of minced garlic until caramelized, then set that aside and steam the squash and zucchini for about 5 minutes in a little broth. I also add 1/2 tsp of nutmeg which tastes amazing. I use low-fat cheese, milk, margarine, and crackers and it still tastes decadent. I also reduce the amount of margarine on top to just 1 Tbsp instead of 2 and it still tastes deliciously buttery. It keeps very well in the fridge and actually makes a yummy breakfast dish the next morning.

Simple Garlic and Basil Pesto

This was phenomenal! I left out the Brazil nuts and just used about 3/4 c pine nuts, which I toasted on the stove. I also added just a pinch of salt, about 1/8 tsp. I tried to follow some users' suggestions to leave out the chili powder, but it was much too bland without. It adds just the right amount of zing without being too spicy (even my 4-year-old liked it). A dash of lemon juice might be a good idea for color preservation because the bright green did darken quite a lot very quickly, but that's just for aesthetic value. It took all my willpower to keep myself from eating it straight out of the blender with a spoon. I am going to make several more batches for canning and give them as Christmas presents to my family. It is so delicious!

This was so great! Per other reviewers' advice I used 1/4 c white wine and 1/4 c water. I also added peas to the mix. It was a hit, and it tasted like I put way more effort into it than I actually did! Next time I am going to try it with chicken or turkey to see how that works - I bet it will be great that way.
