This was so great! Per other reviewers' advice I used 1/4 c white wine and 1/4 c water. I also added peas to the mix. It was a hit, and it tasted like I put way more effort into it than I actually did! Next time I am going to try it with chicken or turkey to see how that works - I bet it will be great that way.

Simple Garlic and Basil Pesto
This was phenomenal! I left out the Brazil nuts and just used about 3/4 c pine nuts, which I toasted on the stove. I also added just a pinch of salt, about 1/8 tsp. I tried to follow some users' suggestions to leave out the chili powder, but it was much too bland without. It adds just the right amount of zing without being too spicy (even my 4-year-old liked it). A dash of lemon juice might be a good idea for color preservation because the bright green did darken quite a lot very quickly, but that's just for aesthetic value. It took all my willpower to keep myself from eating it straight out of the blender with a spoon. I am going to make several more batches for canning and give them as Christmas presents to my family. It is so delicious!

Yellow Squash Casserole
I am in love with this recipe. I saute the onion with a clove of minced garlic until caramelized, then set that aside and steam the squash and zucchini for about 5 minutes in a little broth. I also add 1/2 tsp of nutmeg which tastes amazing. I use low-fat cheese, milk, margarine, and crackers and it still tastes decadent. I also reduce the amount of margarine on top to just 1 Tbsp instead of 2 and it still tastes deliciously buttery. It keeps very well in the fridge and actually makes a yummy breakfast dish the next morning.
