My favorite things to cook
Love to experiment in the kitchen, using my imagination with recipes as templates, cooking with what's in the pantry. Favorites are anything savory, love chicken, love fresh ginger. I try to stick close to lower carb, high fiber--sadly the husband and I like carbs...such is life! Love, love baking bread, but fresh warm bread and butter...so good yet so bad.
My favorite family cooking traditions
In my family of origin, Mom was a fantastic cook. I learned from her to make a great corned beef and cabbage in the slow cooker. Also learned buttercream frosting, love it to this day but have moved to carrot cake w/ cream cheese frosting to reduce sugar intake a bit.
My cooking triumphs
Finally feel proud of my cooking almost every day, biggest triumph has been asking for and finding countless cooking tips at AR and other places online. From a family of lovable know-it-alls, asking was difficult - in the beginning!
My cooking tragedies
Way, way overcooked an expensive roast beef, ended up using it for beef stock! Made a very mealy mac and cheese. My husband is so polite about these things! :-)

Thai-Style Tilapia
We really enjoyed this recipe and will make it again with additions/changes based upon the contents of my pantry. I made and refrigerated the sauce yesterday afternoon, because we had last minute dinner quests and I didn't have enough Tilapia. For the sauce, I omitted the salt-intentionally; the red pepper flakes-unintentionally; and doubled the almonds because we love almonds. Everything blended wonderfully in a regular blender. Instead of stove top, I baked at 400F for ~20 minutes in an aluminum foil-covered pan with some Safflower oil. Really yummy. In the future I'll use fresh coconut milk (all I had was the canned stuff) and some of the meat, fresh ginger, and will be sure not to omit the red pepper flakes.

No Fry Crab Rangoon
Fantastic no-fry recipe! Making small 'goons and with the lighter versions of cream cheese and sour cream mine came to 55 cal each. Deep fried are yummy but we're off all deep fried foods for now. My husband says he likes these baked rangoons better than the deep fried local Chinese places because the crab flavor is the top note rather than grease or sugar. We prefer them as snacks without sauce. I enjoy finding healthy recipes and regularly makeover otherwise unhealthy-for-us recipes, so we never feel as if we're missing anything. Thanks so much!

Cinnamon-Roasted Almonds
Thank you for this healthy recipe! I tweaked to add ground ginger and cardamon, omitted the salt due to diet restrictions. There's a tiny bit of sodium in the egg white which is enough for us. The relatively high 18g total fat content is due to 16 g of polyunsaturated and monounsaturated fats - the good guys! Almonds are packed with vitamins and minerals too. My husband requests these with no concern for the healthiness of the recipe. I have them on hand for munch food. At about 22 nuts to a serving, this is a healthy and satisfying substitute for a bag of chips. Great for guests too.
