Herbed Pork Roast

I used this recipe for a 3 1/2 lb roast. Turned out very good and will use this rub again. I marinated over night. Thanks for a good recipe.

Apple Crisp with Cranberry Sauce

This was very good and very easy. I made half a recipe, used all purpose flour, and added a bit of rhubarb and some blueberries that I had in the freezer. Also a little extra sugar for the rhubarb. I served it with some Cool Whip. A great way to use up leftover cranberry sauce. This recipe is so good, I would even make it with fresh cranberry sauce. Apples and cranberry -- a great flavor combo.

Cake Mix Pumpkin Bread and Muffins

I would not make this again. It was O.K. and it had a good texture, but I have more flavorful recipes for a can of pumpkin and a spice cake mix. It freezes well. I used a caramel flavored frosting and also whipped cream to fancy it up some. I made it as a cake in a Pyrex 9 x 13.

Collard Greens and Beans

I made this last night and it was a big hit with my Tennessee born husband. I pretty much followed this recipe except for the bacon and used chicken stock instead of water. I substituted a smoked ham hock for bacon and made half a recipe. Only used a tiny bit of red pepper flakes. At the end, I added some smoked beef sausage cut into bite sized pieces and it made a complete meal. Next time I will use the bacon. I think the vinegar and brown sugar is what makes this recipe stand out. A good basic recipe, easy to make and I thank you. Did not use sour cream or parm. cheese as I think that would make it more Italian than Southern.

Exquisite Pizza Sauce

This recipe was too sweet for our tastes. After reading many reviews, I found most people really thought this recipe was exquisite. However, for us the sweetness was overwhelming. Next time I will use much less honey or substitute sugar. I do believed the anchovy paste is essential to counter balance the honey, but not enough. I will try another recipe next time.

Rhubarb Upside Down Cake I

Good cake, but wish it had a more rhubarb taste. I followed the recipe exactly, but only baked it 50 minutes. Next time I will cut back on the sugar and marshmallows and add some red food coloring as the rhubarb turned pale when cooked. Everyone else loved it and I served it with vanilla ice cream. I prefer the rhubarb crisp by Chef John.

Chef John's Rhubarb Crisp

This was so very good. I always trust Chef John's recipes and have never been disappointed. As a child we ate a lot of rhubarb as we had a patch in our yard. I have tried to grow it but with no luck here in Los Angeles area. So I must buy it in the market and it is a special treat for us. This recipe was easy to make and so rewarding. I think next time I will increase the amount of filling using 5 or 6 stalks instead of three. I used AP flour and it was fine. I wanted to take a picture, but it was gone before I had a chance to.

Hot and Sour Chicken and Cabbage Soup

Like this very much. I added a shrimp boullion cube as I had no fish sauce, also did not use lemon grass. This broth was as good as some Chinese Restaurants, and that is the main reason we like hot and sour soup. I will cook the cabbage a little longer next time before adding the chicken. Will buy some fish sauce and try it with that next. Also will add tofu and use less cabbage.

Cheese Stuffed Manicotti

This was very good. I made half recipe. I used fresh tomatoes from our garden and made my own sauce. I will make this again using Ricotto instead of Cottage Cheese or maybe half of each. Also will try using Italian Sausage instead of ground beef to make it more Italian.

Slow Cooker Creamed Corn

I had high hopes for this as it sounded so good. We were disappointed with it. The cream cheese didn't add much flavor but did add lots of calories. I will not make this again.

Ellen's Lemon Zucchini Bread

My new favorite zucchini bread. This is so good, very moist and fragrant lemon smell. I used zucchini from our garden and Meyer Lemon from our tree. I followed the recipe exactly, but next time may cut back on the oil and use some applesauce. Will make this again around Thanksgiving with shredded zucchini that I freeze. Thanks for a great recipe, most delicious.

Strawberry Rhubarb Custard Pie

Very good. Easy to make. I used frozen strawberries and rhubarb from our patch. Used the basic flakey pie crust recipe from this site. A nice different type of treat for summer.

Polish Sausage Kraut Skillet

This would have been tasty if I hadn't added the sour cream/flour which made it very mushy. Very unappetizing looking. I make a similiar dish but tried this for a change. I followed this recipe exactly. I do like the recipe up until the sour cream addition so I may try it again without it.

Baked Zucchini Squares

This was very delicious. I did add a little bit of zing with some pork chorizio, as zucchini tends to be bland. We loved it. It wasn't too good heated up in the micro the next day, so next time I will try to make half a recipe as there are only the two of us. Additional comment: I accidentally rated this one star, but it should be five stars.

Pork Chops and Sauerkraut

Made this for my husband for Father's Day. It was very good, very tender and moist for the chops. I have made a similiar recipe in the past, but this one with the chicken broth made it special. Served it with German Spaetzle Dumplings. Yum

Kohlrabi with White Sauce

Not a great recipe. Bought a kohlrabi at the Farmers Market and tried this recipe. Much like creamed potatoes, only not as tasty. Next time, I will just use the potatoes. Kohlrabi not to our taste.

Cauliflower with Dijon Sauce

This was not one of my favorite recipes. The califlower gets overcooked in the microwave, and the sauce is just too stringy. The mayo did nothing for the taste and who needs the extra calories. I will stick with my cheese sauce or just plain with a bit of butter melted over the florets.

I liked this recipe because it only requires three eggs, just enough for my hubby and myself. I baked it in a cast iron skillet and served it with rhubarb strawberry sauce, as we have rhubarb growing in the garden. I am glad to have found this recipe.
