Peach Cobbler II

I'm not sure what went wrong. Even after cooling for over 90 minutes, I had peach cobbler soup. Tasted good, but was super runny. I was hesitant to pour the extra water and butter over before baking. If I try this again, I'll omit that step and see how we like it.

Rosemary Ranch Chicken Kabobs

Outstanding. Will make it for company this weekend - second time this week. I'm growing my own rosemary for the first time, which is what sent me looking for rosemary recipes. Major hit with the hubby, who isn't fond of 'green bits' in his food. He's the one who asked for the repeat! I pan sauteed in batches the first time. Will try it with B/S chicken thighs. Will grill this time. Added: hubby asked for this a 3rd time. B/S chicken thighs are fabulous with this.

Pizza Dough I

I have made this at least twice a week since I discovered this recipe about a month ago. I've used it for pizza, for flatbread (brushed with olive oil, very thinly sliced onion, finely grated cheddar cheese). The only change I discovered was letting the dough rest about 5 - 10 minutes to give flour the chance to absorb the liquid better. I knead it in the bowl for just a moment, then it's ready to go. Fabulous recipe!

Quick Yeast Rolls

I did make this exactly as is, with the exception of the cooking in the muffin pans. Didn't change any ingredients. May have been the weather, but I think I'd like a little more flour. I will continue to use this recipe, however. It was great, and extremely easy to make. Thanks so much.

Five Minute Ice Cream

Excellent recipe. Hubby said it tasted like the DQ strawberry and vanilla oreo blizzard (without the oreos). I'm going to explore other options, including other types of milk and less sugar. Per other reviews, I did freeze it for an hour. May try longer next time.

Homesteader Cornbread

This is THE BEST cornbread recipe. The only thing I did differently was follow another reviewer's suggestion and beat the mixture for 4 or 5 minutes with my hand mixer. I've made this twice in just over a week, and both times the hubby has raved about it. Thanks for a great recipe!

Easy Microwave Chocolate Cake

Terrific. The chocolate craving hit, and this fit the bill perfectly. I followed others suggestions and made it a bit sweeter, then while it was warm, I glazed it with a mix of Hershey's chocolate syrup and powdered sugar - about 2 Tbsp. each. Yum. This is definitely a keeper.

Butter-Dipped Biscuit Squares

I've made a form of this recipe for years. I'd forgotten about them, then rediscovered here. Love 'em. Yes, baking them in the butter is a lot of butter, but these are probably the easiest biscuits I've ever made. Addition: I used to enhance these with some garlic powder and Parmesan cheese on top just before baking.

Beer Bread I

Great, easy recipe. I've tried 2 different beers - bud light and american ale. I think the lighter taste of bud light is more appealing to us, since my husband isn't a beer drinker. Overall, though a very good recipe.

The Best Chicken Fried Steak

Very good crust. I pounded the round steak very thin so it would cook quicker. Didn't use as much oil as called for, so I turned the meat one time. Maybe I didn't have enough meat, but I had way too much milk batter and flour left over. I sifted the leftover flour into the oil for the gravy. Since it was already somewhat seasoned, I used less seasoning in the actual gravy. Will make again.

Pancakes

I'm giving this three stars because I made my own 'self-rising' flour. As far as taste and rise, they were only 1 star. The pancakes were flat. No rise at all. I ended up having to add about 1 1/2 tsp. more baking powder to get a decent lift.

Cherry Tomato Corn Salad

Really liked this. I tweaked it a bit: I used lemon juice since I didn't have any lime. Added very finely diced vidalia-type onion, didn't have any cucumbers. This is definitely a keeper.

Fluffy Canadian Pancakes

Loved these! I'd forgotten about this technique (which I'd learned from a Canadian friend over 30 years ago). Added blueberries. It was a wonderful 'breakfast for dinner' meal.
